Cabbage Roll Soup. Recipe by Always Yummy!

If you like stuffed cabbage rolls, not extra troubles, this fast cooked cabbage soup with minced meat is meant for you! Cook such a soup, it has the same taste as stuffed cabbage rolls but takes less efforts. This tasty and hearty soup with cabbage and beef mince is perfect choice for dinner.

✅ Ingredients:
• minced beef – 1 lb / 450 g
• white cabbage – 14 oz / 400 g
• 2 carrots
• crushed tomatoes – 22 oz / 650 g
• rice – ½ cup / 120 g
• beef broth – 6 cups / 1,5 l
• 1 bulb onion
• garlic – 4 cloves
• olive oil – 2 tbsp
• fresh parsley – 10 g
• sugar – 2 tbsp
• bay leaf – 1
• ground black pepper – ½ tsp
• salt – 2 tsp

✅ You will need:
• stockpot 5 qt /4,5 l
• carving board

Preparation:
1. Dice the cabbage, cut the carrot into small slices, bulb onion into half rings, chop up the garlic and wash the rice in cold water.
2. Heat a stockpot, add the vegetable oil and bulb onion and fry for 3-4 minutes over medium heat.
3. Add the mince and fry for 5 minutes over medium heat stirring constantly and crushing lumps.
4. Add the garlic, carrot, cabbage, rice, crushed tomatoes, broth, sugar, bay leaf, ground black pepper and salt, stir well and bring to a boil. Cover a lid and cook for 30 minutes over low heat.
5. Sprinkle the soup with chopped up parsley.
6. Serve your soup a la stuffed cabbage rolls hot with sour cream and fresh bread.

❗️Advices:
1. You can use turkey or chicken mince in beef stead.
