Why José Andrés wants Washington to root for farmers

"We have to have bigger control of the foods we eat," chef José Andrés said on "Salon Talks." Andrés is urging Congress to reconsider how America's food policies affect small farmers.

"It cannot be that the big, big super farms receive incentives from the Farm Bill and subsidies, but then the small farmers producing carrots and cabbage and cauliflower, they get none," Andrés said.

For the James Beard Award-winning chef, humanitarian and restaurateur, when making policy, including all players in the food system is key. "We need to have small farmers and support them, we need to have mid-sized farms, we need to have the super-big companies, but we need to make sure that we give the same opportunities to everybody."

Andrés' new cookbook "Vegetables Unleashed" features his favorite recipes that put vegetables at the center of the meals.
