COFFEE STEAMED CUPCAKE

Here are the ingredients:

Meringue:
- 3 egg whites
- 1/4 cup white sugar
- 1/2 tsp cream of tartar

Batter:
- 1 1/2 cup cake flour
- 1 cup white sugar
- 1 1/2 tsp baking powder
- Kopiko brown twin pack
- 3/4 cup water

- cup cake liner
- chocolate chips

Procedure:
1. Whisk egg whites until it forms bubbles.
2. Add sugar and cot.
3. Beat at high speed until it forms a stiff peak. Set aside.
4. Mix all ingredients under "Batter". Mix until well combined.
5. Fold gradually the prepared meringue into our batter.
6. Fill the greased cupcake liner with batter until about 3/4 full.
7. Steam for 10 minutes.
8. After 10 min, top with chocolate chips then steam again for another 10 min.
9. Let it cool before serving.

* When steaming, wrap the lid with clean cloth to avoid the water from dripping over the cupcakes.

* Yield = 16 cupcakes
