CONIGLIO IN UMIDO CON PISELLI, CARCIOFI E BASILICO
INGREDIENTS:
(Doses for 4 people)
1 kg rabbit, 6 tablespoons oil, 50 g bacon, 300 g peas (whether or not frozen)
5 artichokes, basil, dry white wine, 5 peeled tomatoes, half a glass of white vinegar
dice broth, a clove of garlic, shallot, celery, salt, pepper
PREPARATION:
Cut the rabbit into pieces, wash it and leave it to soak in cold water with vinegar for 30 minutes

Mince celery, garlic and shallots, place the chopped in a saucepan with the diced bacon and the oil
Let brown a few minutes
Then add the peas and artichokes (previously cleaned and cut into slices)
Stir and, after a few minutes, add the rabbit

Let it brown a little , room, pepper and bath with wine
When it has evaporated add the crushed peeled tomatoes with a fork
Finish cooking at moderate heat by adding hot broth
At the end of cooking, add the roughly chopped basil and serve immediately!

E` already a complete dish, but it goes well with the steamed new fries
The dish is ready, enjoy your meal!
