How To Make Dum Biryani

Dum Mutton Biryani! lets begin to make a delicious Dum Biryani with Chef Don
Soak 3 cups 675 gms of Basmati rice in enough water.
when the pot hot enough add 80 ml of oil followed by whole spices (Black pepper 10-12, cinnamon 3 gms, Black cardamom 1no.,Green cardamom 4 nos., cloves 10-12, Star anise 1,
Cumin seeds 1/4 tsp and 3 bay leaves when they begin to sizzle add 40 gms ginger grated
80 gms garlic grated,you can use which way is convenient for you. saute it until the raw smell goes off.Now, add 500 gms onions sliced, cook until the onions are soft and brown. add mutton 1 kg and seal it on the high flame once the meat gets sealed add masala powders as follows 1 tsp turmeric powder, 1 tbsp coriander powder, 1 tbsp chilli powder, 1 1/2 tsp roasted cumin powder also add in 2 finely chopped green chillies some mint, coriander leaves and salt . Mix the meat well in the masala until is is coated very well. now add in the hot water and cover and cook until the meat is tender about 45 minutes on a low flame.
when the mutton is cooked add in 500 gms chopped tomatoes and handful of chopped mint and coriander. Further cook until the tomatoes are soft. Add 1/2 tsp of garam masala. let it simmer for 5 to 8 minutes.
In A large pot transfer the cooked meat and the soaked rice with enough water and cover it with cloth and lid and cook it for approx 20 to 25 minutes and done. tasty and flavourful Dum Biryani is ready to serve.
