*Potato Sandwich with Serrano Ham*

You'll need (for 6 portions):

- 3 large, long baking potatoes
- 1 tbsp olive oil
- salt and pepper
- 3 slices of mozzarella
- 1/4 cup red pesto
- 3 slices of Serrano ham
- 1/4 cup arugula
- some balsamic vinegar

Here's how:

1. Bake the potatoes, cut them in half, and carefully hollow them out using a spoon. Cut away the end pieces before brushing the insides of the potato halves with olive oil. Season them with salt and pepper. Place the mozzarella in the hollowed out potato halves and bake them for four minutes at 300°F.

2. Spread the pesto and fold the ham onto three of the halves before placing the arugula on top. Drizzle some olive oil and balsamic vinegar on top of the salad.

3. Place the remaining potato halves on top of the garnished ones. Hold them in place using cocktail sticks and cut them into bitesize portions.
