1. Put butter in a mixing bowl with about half icing sugar beat together with a hand whisk until combined. Then add remaining icing sugar and beat until light and fluffy.

2. Whisk in egg whites in two stages, then whisk in the vanilla until combined.

3. Gently stir in flour until just combined, do not over mix. It needs to be consistency of cake mixture. Cover and chill for at least 1hr.

4. Make a stencil from a thin piece of cardboard or plastic. Draw around a ramekin or small glass to get a perfect circle, about 7.5cm (3in) in diameter. Cut out centre of circle, to create stencil.

5. Lightly grease a baking sheet and line with baking parchment. Using stencil as a guide, put a small amount of batter in centre and spread evenly in hole, using a scraper or palette knife. Make sure it’s a very thin layer that you can almost see through. Carefully lift away stencil and repeat with rest of mixture.

6. Bake in batches at 170°C (150°C fan) mark 3 for 8-10min, until lightly browned around edges.

7. While still hot and flexible, use a metal palette knife to remove tuiles from tray and gently curl them over a rolling pin to set. Work quickly so they don’t set before shaping.
