Deep Fried Whitebait Recipe | Good Housekeeping UK

Watch this video to find out how to cook whitebait and master the secret to perfectly crisp and crunchy whitebait.
Ingredients:
700g (1½lb) whitebait
4tbsp plain flour, to dust
Vegetable oil, to fry
Lemon wedges (to serve)
1 Rinse whitebait and pat dry on kitchen paper.
2 Season flour with salt and pepper and dust with seasoned flour.
3 Heat oil in a deep-fat fryer to 190C (alternatively, use a high sided pan, half-filled with oil. The oil will be hot enough when a cube of bread browns in 20sec).
4 Fry whitebait in small batches, for 3min, until golden, crisp and floating on the surface.
5 Remove and drain briefly on kitchen paper. Season and serve immediately with lemon wedges.
