Brown shallots are most commonly available type of shallot. They have a finer, milder flavour than onions, which is why chefs use them for flavouring delicate sauces.

Banana shallots are a cross between a shallot and an onion, and named so because of their long shape. They’re much easier and quicker to peel and chop, so are often favoured when lots of shallots need to be prepared in one go.

1. To prepare brown shallots, slice off bottoms, root end, with a small sharp knife and peel.

2. To chop a shallot, cut shallot in half lengthways. Put cut side down, flat on board, and make fine cuts lengthways, not quite reaching root.3 Then make fine cuts widthways along shallot, stopping at root.
