1. Cake tins and baking trays come in a wide range of shapes and sizes. Different size tins hold different capacities or volumes of batters and this must be taken into account when substituting one size for another in a recipe.

2. To work out the tin's width and length always measure inside edge to inside edge of pan, so that measurement doesn’t include thickness of tin.

3. To measure a round cake tin, measure across diameter of tin, from edge to edge. If sides are sloping, make sure to measure base of tin.

4. To measure depth of a tin, put ruler or tape measure straight up from bottom of pan. Make sure tape measure is held straight against side of tin, if it’s slanted at all it won’t be a true measurement.

5. To measure a tin's volume and how much batter it will hold, pour water into tin until it’s full to brim. Transfer water to a measuring jug to take a reading of volume.

6. Use this method to work out whether you can substitute one type of cake tin for another in a recipe. If they both hold same volume, you should be able to use them interchangeably. Make sure to keep an eye on baking time though, as it can vary if you do use a different tin.
