Rabbit head and other spicy Sichuan snacks

When it comes to using an animal for food, the Chinese certainly are not wasteful. While other culinary traditions may discard things like the neck, feet and head, regional dishes in parts of China turn those parts into popular snacks. Some examples come from the southwestern province of Sichuan where you can find items like chicken toes and rabbit heads on the menu. But for those who are unfamiliar, these spicy snacks are an acquired taste.
