Baghare Baingan Recipe || बघारे बैंगन विधि || Brinjal Baingan Baghare || Eggplant Recipe

Baghara baingan is a popular Indian cuisine eggplant/brinjal curry of Hyderabad. It is also used as a side dish and this dish is also very popular with the Hyderabadi biryani. Bhagare baingan was introduced during Mughal Empire from Taskent, then became popular in Hyderabad.

INGREDIENT USED:

Brinjal (1 Pcs) (Cut into medium Pcs) – बैंगन
Turmeric Powder ( ½ Tsp ) – हल्दी पाउडर
Coriander Powder ( ½ Tsp ) – धनिया पाउडर
Aniseed Powder (2 Tsp) – सौंफ पाउडर
Salt ( ½ Tsp ) - नमक
Cumin Powder( ½ Tsp ) – जीरा पाउडर
Red Chili Powder ( ½ Tsp ) - लाल मिर्च पाउडर
Imli (sweet & sour) (2 Tsp) - इमली की चटनी
Mustard Oil (2 Tsp ) - सरसों का तेल

STEP BY STEP COOKING:

1. Heat oil in a pan, add 2 Tsp Mustard oil and add 2 pinch of
Cumin.
2. Wait until begin to sizzle. Add sliced Brinjal and wait for 2 min
until shallow fried.
3. Add Cumin Powder( ½ Tsp ), Coriander Powder ( ½ Tsp ), Red
Chili Powder ( ½ Tsp ), Turmeric Powder ( ½ Tsp ), Salt ( ½ Tsp ).
4. Mix it well and cover the lid for 2 min.
5. After that Add Imli (sweet & sour) (2 Tsp), add Aniseed
Powder (2 Tsp) mix it well, add ½ cup water and cover the lid
for another 2 min.
6. After 2 min open the lid. Now stir and begin to cook on a
medium flame for another 3 min.
7. Now Baghare Baingan is Ready. Serve It.
