Knife-Shaved Noodles You Can't Miss in China

If one dish could represent Datong, locals would tell you it'd be without doubt 'Dao Xiao Mian' (knife-shaved noodle). Locals say the world's best noodles come from Shanxi, and Shanxi’s best noodles are 'Dao Xiao Mian' from Datong. It is made by a chef holding a large piece of dough in one hand and a knife in the other before starting to peel strips off the dough. The dough will then fall into the pot of boiling water and cook into noodles. It is served with sauce, roasted-meat and other vegetables.
