Egg Fried Rice
INGREDIENTS
Cooked Rice: 2 cups
Onion: 1 finely chopped
Beans: 5 to 6 finely chopped
Carrot: 1 small carrot (finely chopped)
Coriander Leaves: 5 to 6 finely chopped
Red Chilly Sauce: 1tsp
Soya Sauce: 2tsp
Red Chilly Powder: 1/2tsp
Eggs: 2
Cooking Oil: 3 Tsp
Salt to taste
PREPARATION:
1. Break the eggs in a bowl, add some salt and mix well.
2. Heat the pan add 1tsp oil to it.
3. Add beaten egg mixture to the pan.
4. Scramble the eggs and allow it to cook for 3 to 4 mins in medium to high flame.
5. Remove the eggs from pan and keep it on a plate.
6. In the same pan add 2 tsp of oil and add chopped onions,
7. Cook the onions till color changes.
8. Now add chopped beans and carrot and cook for 3 to 4 minutes.
9. Add previously cooked eggs and mix well.
10. Now add cooked rice to the mixture and add soya sauce, chilly red sauce, red chilly powder and salt to taste.
11. Mix all the ingredients.
12. Cook for 4 to 5 minutes in high flame.
13. Finely add chopped coriander leaves.
14. Fried rice is ready to serve.
