Learn How To Make Mango Rice And Paanakam With Chef Lakshmi Only On Variety Vanatalu.

Mango Rice recipe is one of the most basic rice dish made in south indian homes during the mango season. It is made with raw sour mango. This recipe is almost similar to the Lemon Rice or the Coconut Rice which most of us make at home. The falvoring and the actual taste in this mango rice comes from cooking the mango in oil throughly.
Ingredients:

For Rice:
1 cup rice
1 tbsp oil
1/2 tsp salt
2 cups water
1/4 tsp Turmeric powder

For Mango seasoning :

2 cups raw mango peeled and shredded
3 tablespoons oil
1/2 teaspoon Mustard seeds
About 10 curry leaves
2 tablespoons peanuts
2 tablespoons chana, optional
1 tablespoon ginger sliced, adrak
2 green chili seeded and sliced lengthwise
1/4 teaspoon turmeric
1 teaspoon salt

Method :

1. Wash rice gently changing water several times until the water appears clear.
2. Take 1 cup washed Rice, add 2 cups of water . In that add pinch of Turmeric , salt and oil.
3. Pressure cook it for 3-4 whistles.
4. Once whistles are done, allow it to cool down for 15 minutes.
5.Heat the oil in a saucepan over medium heat, oil should be moderately hot, add mustard seeds.

Preparing The Seasoning:
1. Heat the oil in a frying pan on medium heat.
2. Once oil is hot enough, add Mustard seeds, Whole Moong Dal, Split Chickpeas, Peanuts,
Cashews.
3. Stir-fry the all ingrediants for about 2 minutes until itchanges the color to light brown.
4. After seeds crack add Dry red chillies, ASafoetida, curry leaves, green chilies, ginger and
stir it for a few seconds.
5. Add tempering mixture to the rice and mix it well.
6. Lastly, add lemon juice and mix it.
7. Mix gently, making sure do not break the rice and stir-fry for about 2 minutes.
Rice is ready, Enjoy!

Happy Sri Rama Navami!! We offer food to the deity as Neivedyam(Naivedyam) on festive occasions and auspicious days as part of a worship ritual, before eating it. One such popular prasadam is panakam. Panakam, a traditional and healthy sweet drink is prepared during Sri Rama Navami as Neivedyam for Lord Rama. Today, I’m going to share a quick Panakam Recipe, which is a must for this festival.
Ingredients
½ Cup Crushed jaggery
2 to 2½ Cups Water
1 teaspoon Pepper, coarsely crushed
3 Cardamoms, crushed

Method:
Dissolve the jaggery in a half cup of water. Mix it well till it dissolves completely.
Once the jaggery dissolves, strain to remove any impurities.
Take a pitcher and add water to it. Add the jaggery liquid to the pitcher or any big jug depending on the quantity you are making.
Now add the pepper and cardamom powder. keep it in the refrigerator to cool. In the meantime the flavours from the pepper and cardamom infuse into the liquid.
You can serve as it is or strain and serve.
