Swiss Rolls are perfect for a light, sweet treat on a sunny day but what would make a Swiss Roll better? Adding multicoloured polka dots, obviously! This method is one Ive been wanting to do or ages and now Im sharing it with you guys. And once you have it down, the possibilities are endless.\r

For the dots\r
50 g unsalted butter, softened\r
50 g icing sugar, sifted\r
2 eggs whites \r
50 g plain flour, sifted\r
Food colouring (paste or liquid in red, orange, yellow, green, blue and purple)\r

For the sponge\r
3 large free-range eggs, separated\r
80 g caster sugar\r
45 g unsalted butter, melted\r
75 g plain flour, sifted\r
½ tsp vanilla extr\r

For the filling\r
120ml double cream\r
Large blob of jam\r
Fruit of your choosing!\r
