Be it Aloo Frankie, Cheese Frankie or Schezwan Frankie. We all love it, dont we? Today, lets make the perfect Street Style Veg Frankie Recipe at home. Totally inspired from Amarjit Singh Jis version or better known as Tibbs Version :)\r

Ingredients:\r
Rotis : Flour/Maida - 2/3 cup\r
Wheat Flour/Atta - 1/3 cup\r
Salt - 1 tsp\r
Oil - 1 tbsp\r
Water - to make dough\r
\r
Flour - as required to dust while rolling\r
\r
Method:\r
For Dough: In a bowl, add in the maida & atta, salt and oil. Use water as required to make a soft dough, knead dough for 5-6 minutes. Cover with a damp cloth and let it rest for 15-20 minutes.\r

Divide dough into 6 portions, and roll into large thin rotis. Cook in very hot tawa for 10-15 seconds each side. Keep covered!\r

Pickled Green Chili: Vinegar/lemon juice- 4 tbsp\r
Green Chili : 3 chopped\r
\r
For Pickled Green Chili - soak the chilies in vinegar for 15-20 mins.\r

Filling : Oil - 1 tbsp\r
Ginger - 1 inch (crushed)\r
Garlic - 5-6 cloves (crushed)\r
Green Chili - 2 (crushed)\r
Frankie Masala - 1 tbsp (more or less)\r
Red Chili powder - 1/2 tsp\r
Turmeric Powder - 1/4 tsp\r
Potatoes: 6 Boiled, Peeled & Mashed\r
Salt - as per taste\r
Coriander Leaves : 2tbsp Chopped\r
Water - 1/4 cup\r

For Filling: In a pan, add in the oil, ginger-garlic-greenchili and saute for a minute.\r
Follow it up with frankie masala, red chili powder, turmeric powder and roast for a minute.\r

Add in the potatos, coriander leaves, salt and mix well. Add water if required. Take out from pan, let cool.\r

For Making Frankie : Butter & Oil - 6 tsp each\r
Onions: 4 chopped fine\r
Green Chutney : 3 tbsp\r
\r
Final Method: Toast rotis in tawa using oil & butter in very high flame.\r
Make oblong cutlets using the potato filling, roast them in the tawa. \r
Place the cutlet in the roti, some onions on top along with pickled green chilis and frankie masala. Smear Green chutney and roll it up! Serve hot!\r

Frankie Masala Ingredients:\r
\r
• Oil - 1/2 tsp\r
• Asafoetida - 1/8 tsp\r
• Black peppercorns- 1/4 tsp\r
• Cumin Seeds - 1/2 tsp\r
• Coriander Seeds - 1/2 tsp\r
• Anardana - 1 tsp\r
• Amchoor - 2 tsp\r
• Saunth Powder - 1/4 tsp\r
• Salt - 1 1/2 tsp\r
• Chilli Powder - 1 1/2 tsp\r
• Turmeric Powder 1/8 tsp\r

Method: In a pan, add in oil, and - asafoetida, blackpeppercorns, cumin seeds, coriander seeds, anardana seeds and roast for 2-3 minutes in low flame.\r
Then add in - amchoor powder, saunth powder, salt, chili powder and turmeric. Mix well, turn off flame and let cool.\r
Grind to a powder and use! \r
