Spring Salad Jar Recipe | Danielle Hayley

Here comes the sun! It’s spring and we’re feeling some fresh salads for lunchtime. Today’s recipe comes in a jar, so it’s perfect to take with you to school or work. How does it work? You pour the vinaigrette in the bottom first and then layer in your other ingredients so they don’t get soggy. Perfect!
SALAD JAR INGREDIENTS:
· 90g spinach leaves, divided
· 1 ripe pear, cored and thinly sliced
· 1 avocado, peeled, pitted and diced
· 100g shelled pistachios
· 125g crumbled goat cheese
· Half of a small red onion
· 1/2 yellow pepper, diced
· Seeds from 1 pomegranate
CITRUS VINAIGRETTE INGREDIENTS:
· Juice of one large lemon (freshly-squeezed)
· 60ml white balsamic vinegar
· 1 tablespoon honey
· 1/4 teaspoon salt
· 1/4 teaspoon freshly-ground black pepper
80ml olive oil
METHOD:
First to make the citrus vinaigrette, fully combine all the ingredients.
Now to build the salad. Reach for a large jar with a tight lid. Then pour as much vinaigrette as desired to cover your salad. Doing this first will ensure it doesn’t
get soggy.
Then layer in the pear, followed by the yellow pepper. Then the spinach leaves followed by the pomegranate seeds. Next the
avocado with a sprinkle of shelled pistachios. Followed by finely chopped red onion, another handful of spinach leaves. And finally top the jar with crumbled goat cheese.
Seal it and keep refrigerated until you’re ready to eat. Pour it out onto a plate for a perfectly layered, un-soggy salad!
