Chocolate Chip Cookies For Two

Hmmm - 4 cookies will make sure that you don’t over-eat your snacks…

Ingredients:
3 Tbsp (45 mL) unsalted butter, room temperature
2 Tbsp (30 mL) firmly packed brown sugar
1 Tbsp (15 mL) sugar
1 egg yolk
1/4 tsp (1 mL) pure vanilla extract
1/3 cup (75 mL) all-purpose flour
1/4 tsp (1 mL) baking soda
Pinch salt
1/4 cup (60 mL) semi-sweet chocolate chips


Method:
Preheat oven to 350°F (180°C).
Cream together butter, both sugars, egg yolk and vanilla until smooth.
Stir in dry ingredients until just combined.
Mix in chocolate chips.
Drop 4 equal mounds dough on a baking sheet, about 2” apart.
Bake 12 - 14 minutes, or until golden.
Cool on baking sheet 2 minutes then transfer to wire rack to cool completely.
