How to Change Mail View in Mac OS X 10.7 Lion

Apple has revised the Mail app included with OS X Lion and given it a new look as well as a few new features that make setting up new accounts slightly more intuitive.
The new default UI looks more like the email client as it appears on the iPad than the traditional desktop program users have come to know over the years. Thankfully, setting things back the way they were is just a matter of setting a few options.
