This happens to be white chard but it also comes in red and yellow. What you are looking for is a shiny firm leaf. You want to make sure that there are no little holes or blemishes on the leaves. To store it in the refrigerator, take the unwashed bunch of kale, wrap the base in a paper towel, a dry paper towel, and place it in a plastic bag from the grocery store. You can also use the perforated green bags or even a cloth green bag as well. Place the bag in your refrigerator, not too far to the back or the bottom and it will last there for one to two days but you definitely should try to use your greens as soon as possible. To clean your greens, take the leaves off of the stems. You can eat the stems on swiss chard but not really on kale. Tear them up, soak them in cold water. Rinse it really well to make sure that all of the debris has fallen to the bottom and then you are ready to go. Enjoy!
