Mexico uses a lot of beans and a lot of vegetables and lots of corn tortillas. If you are gluten sensitive that is great for you because you can opt for corn instead of flour tortillas. You can pretty much vegetarianize anything. Tacos just replace the meat with beans, if you are vegan just get rid of the cheese. A lot of times they do not serve it with cheese, that is an American thing. Tostada salads, opt for beans instead of meat, get the cheese off and replace more vegetables. You can do guacamole, you can do salsas, you can do all sorts of things. The only thing is to ask and see if beans are especially refried if they are cooked with lard or if they have been made with a chicken or a beef broth. But other than that you are golden in Mexico.
