Mexican Vegetable Rice

Ingredients:
1 green bell pepper chopped
1 cup water
1 1/2 cup rice cooked
2 tbsp olive oil
2 tsp garlic minced
1 cup diced onions
1 1/2 cup tomatoes diced
3/4 tsp cayenne pepper
1 cup frozen peas and carrots
2 tbsp parsley chopped
Salt and pepper to taste

Preparation:
Take a large sauce pan, heat the olive oil in the pan.
Sauté finely chopped onions, garlic and salt in the heated oil. Now add vegetables, black pepper and cayenne pepper and mix well.
Add the tomatoes and mix.
Add water and parsley.
Now add rice and mix gently.
Serve hot.
