00:12You probably want to see my gym and fridge. Let's go.
00:30All right, let's see that fridge.
00:34The refrigerator.
00:36What staples do you keep in there?
00:38We always have coconut water.
00:40We always have what I call the infinity milk.
00:43They use pressure to pasteurize it.
00:46This is back when we were concerned about public health
00:49and respected germs and science.
00:52It was a different time.
00:54We always have Trader Joe's Dijon.
00:57Now, there are many, many Dijon mustard mutar available,
01:01but I strongly believe that Trader Joe's is, as the kids say, the best.
01:08And this is chicken from Gelson's.
01:10We like the lemon garlic.
01:12It's just a little better.
01:14Always have the Wii yogurt.
01:16Love the plastic tops that you can buy online.
01:19The reusable tops for Wii yogurt.
01:22Talk about exciting. Ha ha!
01:25It's crazy, Bill.
01:26What would we never see in your fridge?
01:28You won't see prepared food.
01:31I'd buy so little of it, I can't tell you what you wouldn't see.
01:36But we always have fresh fruit.
01:38Always have blueberries.
01:40Very seldom don't have blueberries.
01:43My favorite brand of apple is the Envy.
01:47It's very sweet.
01:48I've heard people say,
01:49Well, you shouldn't eat apples because they're full of sugar.
01:52That's why they're good.
01:55Like...
01:57What do you have for breakfast?
01:59When you get up, you want to break your fast.
02:01You want to eat break fast.
02:02Breakfast, get it?
02:04Always have eggs.
02:05Now, I know people are running in circles screaming about the price of eggs.
02:09There's so much protein.
02:12If an egg costs a dollar, it's still a pretty good value, you guys.
02:20You have a beautiful garden here, but is there any produce you still buy from the supermarket?
02:24I think anything you grow at home is probably better than you get in the grocery store.
02:28However, you guys, the strides that agricultural scientists, also known as farmers, have done with these melons.
02:38These modern melons are so sweet and yummy and fabulous.
02:43And they have no seeds.
02:45They're about to show up.
02:46The melons are about to be everywhere.
02:48I'm excited.
02:49How has your diet changed over the years?
02:51My diet has not changed much.
02:53My grandmother was French.
02:55She spoke English with an accent my whole life.
02:57So I was raised on what I think you all call a Mediterranean diet.
03:01Maybe I use less butter than I use.
03:05Maybe.
03:06Because this olive oil is so good.
03:09What's your go-to protein?
03:10Go-to protein is chicken.
03:12I mean, there's going to be a chicken someplace.
03:14But nowadays, gotta say, kids, young people, bachelors, be sure to have beans.
03:21We are eating so many beans.
03:23Oh, where to begin on the beans?
03:25What's the toughest diet you've tried?
03:27I did do intermittent fasting to lose a little bit a couple years ago.
03:33But it was mostly just not eating as much.
03:35So, wait.
03:36You're saying as in not as much food.
03:40Wow.
03:41How would that work?
03:43It's science, Bill.
03:45What's your midnight snack?
03:46You guys, I eat so much popcorn.
03:48I can't even describe to you.
03:50No microwave bags for Mr. Bill Nye.
03:52Right now, we're still using natural gas.
03:58So, you'll see the oil we'll get in fluid mechanics, you call these fingers.
04:03They'll be hot spots.
04:05This brand of popcorn popper has been around a long time.
04:10So, you just start turning it.
04:11And for some reason, years ago, I started turning left-handed.
04:16I don't know.
04:17I think most people would turn right-handed.
04:19So, it stops.
04:21We're in business.
04:22With this high-quality popcorn and this time-honored device, there are no unpopped kernels.
04:28No one likes unpopped kernels.
04:31What foods do you hate?
04:33Foods that I hate?
04:35Well, you guys, you know, when this food is too spicy, I just don't enjoy it.
04:39I wasn't raised with it.
04:41A little bit of spice.
04:42Heck yes.
04:43A little bit of spice.
04:44Looks like we won't see you on Hot Ones anytime soon.
04:47What's your favorite kitchen gadget?
04:50This fruit juicer.
04:52Oh, my goodness.
04:53This is the real deal, people.
04:55This makes it so much faster and easier.
04:58And I cannot say enough good things.
05:00The electronic thermometers, when you use these devices, it comes out perfect.
05:07It comes out perfect.
05:09It's not magic.

05:12Do you drink coffee?
05:14I very much enjoy my coffee in the morning.
05:17Coffee, bean, and tea leaf is a West Coast brand.
05:21It's very good.
05:22It's dark, but not too dark.
05:24And you gotta also have the grind right.
05:27If you go too fine, as strange as it may seem, doesn't get as rich.
05:34Doesn't have as good flavor.
05:35And I usually put sugar.
05:37Do you like to cook?
05:39Oh, seriously, you guys, I cook all the time.
05:42I make the salad dressing often.
05:45Sometimes Liza makes it.
05:47We eat swordfish now and then.
05:49I cook swordfish out there.
05:51And now and then, you guys, a couple times a year, we'll have the tri-tip, which is really good.
05:56Word is you're also the salad guy.
05:59Can you show us how you make that dressing?
06:01In general, not always.
06:02We're an apron.
06:03That apron might look better than your lab coat.
06:05And we put in the salt on the order of a quarter teaspoon.
06:11Here's the garlic.
06:12So you rub the salt.
06:15And the mechanical action of the salt acting like sandpaper on the garlic to liberate the oil.
06:21You're a bon vivant.
06:23You're just living your life.
06:24You just leave the salt on your fingers.
06:26And somehow the world keeps spinning.
06:30Two apple cider vinegars.
06:32Now, there is a school of one vinegar.
06:36I don't understand it.
06:38So you'll see the vinegar is an acid.
06:41And you see, you hardly see salt now.
06:44It's dissolved.
06:45Then, that Dijon is better.
06:48Plastic spoon because we do not want to damage the 75-year-old salad bowl.
06:54Put the mustard in the vinegar.
06:57And then, three oils.
07:00I just used this spoon.
07:02There are many spoons in the world.
07:04Pick one.
07:05There it is.
07:07And you put the lettuce on top of the utensils like this to keep them dry until it's time to wet the salad.
07:18To toss the salad.
07:20Often, a little ground pepper.
07:23The smell is fantastic.
07:26It's how we do it in the lab.
07:28You don't put your nose over it and you...

07:34Well, all this food, all this talking about eating.
07:37I gotta get to the gym, people.

07:44So, this is the gym.
07:46We spared no expense.
07:48I assumed Bill and I would have more equipment.
07:50How often do you work out?
07:52So, I work out with Jesse three or four days a week when I'm here in LA.
07:58We go way back.
07:59You came to the wedding.
08:00Yep.
08:01Primarily, Bill and I do strength building.
08:04We lift weights.
08:05Yeah.

08:09I've seen a lot of basement home gym setups.
08:11Why did you choose to keep it outside?
08:13Well, exercising outside in Southern California is just so lovely.
08:17We have these beautiful blue skies.
08:19We've got the garden.
08:20Once in a while, we'll interact with the neighbors.
08:23The wind blows through.
08:25It's just nice.
08:26But we also enjoy working out at the gym sometimes, yeah.
08:30But then here, after the workout, we'll have the friendly competition with the disc golf discs.
08:39A little putting competition.
08:41What exercises do you try to avoid?
08:44You're not a fan of the cross training?
08:46No.
08:47Why not?
08:48Not for somebody like us.
08:49I mean, for younger people, it's fine.
08:51But you and I know.
08:53Why not?
08:54We're too fragile.
08:55Yeah.
08:56You get injured.
08:57Well, kids, I'm gonna be 70 years old in a few months.

09:04It's surprisingly strong.

09:08What's the most difficult part of working out at 70?
09:10The problem is flexibility.
09:11As you get older, as I get older, you're just much less flexible.
09:16How has your exercise routine changed over time?
09:19Well, you gotta spend more time stretching.
09:22You get less and less flexible.
09:24Everybody on my mother's side can do this with our heels flat.
09:28I've met a lot of people like, Jesse, can you do this?
09:31I think so.
09:32Heels flat?
09:33I bet I could.
09:34A lot of people I've met can't at least not readily do that.
09:37But why didn't you play catcher?
09:39Because I'm skinny and not skilled.
09:42We have never been injured lifting weights.
09:44No.
09:45In the 11 or 12 years.
09:46That's right.
09:47That's a true fact as opposed to a false fact.
09:51Yeah, I've never gotten those crazy torn muscles and knee injuries
09:57and the hips and we never had any of that because he runs the show.
10:02Sure.
10:03What role does consistent exercise play in your life?
10:05I guess consistent exercise helps you spend more time in your garden,
10:09spends more time anywhere.
10:11Consistent exercise just allows you to sleep better, eat better, just happier.
10:17And plus, hanging out with Jesse is very social.
10:20We talk about all sorts of things during the workout.
10:23Apart from lifting weights, how else do you stay in shape?
10:26My big thing is bicycling.
10:28You know, I used to be, as I like to say, I used to be very good on a bicycle.
10:32Now I'm okay.
10:33And I like being out on the road.
10:35I am not a sit in the house, ride a stationary bike person.
10:39Not my thing.
10:40My wife and I will walk up to this overlook and then back down.
10:44And it's about five miles, just about exactly five miles round trip.
10:48We did it last night.
10:49We walk a, must be what?
10:51300 vertical feet.
10:52Which isn't that much, but it's not nothing.
10:54It's uphill.
10:55Do you deal with any nagging injuries?
10:57Like, so you can see how one shoulder goes down.
11:02That's an old collision playing ultimate frisbee.
11:05And I dislocated my shoulder.
11:07It was in the early days before people realized it's not a contact sport.
11:11I came back too fast.
11:13I didn't rehab it properly and it's still a mess.
11:18So that's a lesson, young people.
11:20Yes.
11:21Do your rehab.
11:22It was 40 years ago.
11:25What's your favorite exercise of all time?
11:27My favorite exercise?
11:28Oh, bicycling, if that's an exercise.
11:31Yeah.
11:32On a hill.
11:33What keeps you motivated to stay fit?
11:35Jesse.
11:36Jesse keeps me motivated.
11:38No, I just, I want to always feel good.
11:42I like being fit.
11:43I like being quick.
11:45I like being, being able to move around.
11:48Bill is actually one of my best clients.
11:52Strong and highly motivated.
11:55I'll tell you, there are these guys I ride bikes with back east.
11:59And they're just generally stronger, better cyclists.
12:04They're, they're, they're, they're smoother and everything.
12:06But when it comes to any hill at all, the guys with carrying the extra weight,
12:13just, it just is difficult for them.
12:16Ha ha ha.
12:17Bwa ha ha ha.

12:29The afternoon is my best.
12:31I look forward to messing around at home, cleaning things up and then going to the gym.

12:37Squat, I guess.
12:38CrossFit, yay or nay?
12:40I'm not into CrossFit.
12:42Favorite song on your workout playlist?
12:44Little Big Dry.
12:45It gets in, it's nothing but mud, but it gets in your blood.
12:48That's the reason that I love the Little Big Dry.
12:51Pull-ups or chin-ups?
12:53I can barely do chin-ups, so chin-ups.
12:56Well, one day to be able to do pull-ups over and over.
12:59Oh, a dream.
13:00Dumbbells or kettlebells?
13:02Dumbbells, but we do kettlebells sometimes also.
13:05So, it depends.
13:06Run on the treadmill or the great outdoors?
13:08Great outdoors.
13:10Especially in bicycling, I am, I do not fully grasp the stationary bike.
13:16I have done it.
13:17Oh ho.
13:18Cardio or weights?
13:19Oh, you gotta have some of each.
13:20So, bicycling and I like weightlifting for strength.
13:24Big legs or big arms?
13:26I would like to have big arms.
13:28I don't, but I would like to have, but I do have legs, you know, I do.
13:32From all that cycling.
13:34The biggest compliment?
13:35Jacked, ripped, swole or cut?
13:37Oh, I'd like to be ripped, I think.
13:39Yeah.
