00:00Welcome to day three of my spring series. Tonight we're making my spring chicken and leek soup
00:05with lemon, fresh herbs, and topped with chili oil. Here's your bite. Here's my bite. So good.
00:12And here's how to make it. Season and sear your chicken breasts on both sides then remove from
00:16the pan. Add in another touch of butter and saute your leeks, celery, and carrots with Italian
00:20seasoning, calabrian chilies, and salt and pepper. Give that a stir and cook for about 10 minutes and
00:24once soft add in as much garlic as you like, stir and then deglaze with white wine. Scrape up any
00:28brown bits on the bottom of the pan and then pour in your chicken broth and water. Season with salt
00:32and pepper and then bring that to a gentle boil. Add back in that seared chicken along with its juices
00:36and then throw in a parmesan rind and an herb bundle. Cover and simmer for 10 minutes to cook
00:39the chicken through then remove the chicken and give it a shred. Pour in the orzo, give that a
00:43stir and simmer for about 10 to 15 minutes or until it's cooked through. Remove the herb bundle and add
00:47in the shredded chicken. Now instead of adding cream to thicken the soup we're going to temper two eggs
00:50with lemon juice and a ladle of hot broth and then pour that directly into the soup. Add in the frozen
00:55peas, a couple handfuls of spinach. You could also use kale and give that a stir to wilt. Finish with
00:59parmesan cheese, fresh parsley, fresh dill, lemon juice, and taste for seasonings. And that's it.
