00:00I'm one of my family, one of my family members of my family.
00:06And today, I'm the one who makes my kitchen staff here at Anihan.
00:14One of the practices that we do here in the restaurant, and I think that is also true
00:18in many restaurants in the Philippines, is that we have what we call family meal.
00:24So, ito yung meal allocated to the staff.
00:29And of course, again, when you're in the business of a restaurant,
00:33malaking factor pa rin dyan yung cost.
00:35You wanna provide meals for your staff,
00:39pero at the same time, kailangan maximize pa rin yung resources.
00:43And what we have for today's lunch is basically kimchi stew.
00:49Ang maganda dito, kung isipin mo kimchi di ang mahal na ano,
00:53we make our own kimchi.
00:55So, may mga batches kami na nagagawa during the time na sobrang mura
01:01ng bok choy o yung petchoy bagyo.

03:20kasi yung kimchi natin meron din siyang sariling timpla.
03:25Normally, we use 2.5% salt for our kimchi para ma-ferment siya.
03:33And then, hindi ko muna sinasama yung pinakasabaw.

06:38Kasi once na ibagsak natin yung ating shrimp, sigurado wala pang five minutes tapos na yung cooking process.
