My name is Duncan Kirk, myself and my wife Faye own the Bakeful Tart Shop.

Can you tell us more about the refurbishment and what you did and why?

Sure, so what we've done as you see looking through, it opened up quite a lot

so it's given a lot of space back to the customer. The idea or what we want to

achieve is a quick and simple process or option for customers coming to Bakeful

that showcases the food that Bakeful is famous for. So it is the Bakeful pudding,

it is the Huntsman pie, it's the homity pie and obviously on top of all that is

the Bakeful Tart for which we are famous. And what makes your Bakeful Tart unique?

So it's the original recipe. We own the original recipe as part of our

intellectual property. So if you were to buy an imitation in a supermarket or

somewhere else, it's a very different product that you'll get. There'll be

flour in the mix that makes it a cake rather than a tart. We use the original

ground almonds rather than almond essence and obviously the the secrets of

the recipe, some of that we don't share as well. Well as the refit and opening up

the floor space for the customer, there's three other things that are quite key to

what we've done. The first one is if you look over there on the far wall, we've got a

huge map of the world and that is an opportunity for customers to put their mark

in the map of where they're from and when they visited. So we get a beautiful

picture of where Bakeful is attracting its visitors from and all corners of the

world. The second thing we've done is we've launched fully recyclable,

sustainable, environmentally friendly coffee cups. There's no plastic lids, there's

no wax in the making, they're a hundred cent recyclable and that's something we

hope other businesses in Bakeful will do. The third thing we've done is we've

developed a piece of world-leading software for allergens, for people with
01:53
allergens and intolerances, so that if they come in and say I'm allergic to
01:57
whatever it may be, any particular product whatsoever, it will curate the menu and

give them the entirety of the menu that is safe for them to eat. So whatever your

allergy, whatever your intolerance, we have world-leading software that we've
02:11
developed here that will give you a very personalized menu experience.
