00:42we are a bit spoiled to have curtis here in the kitchen two days in a row
00:46and i bet you he has got something insane in store for us

01:08curtis stone in the house two days in a row and this time no one's going home
01:22it's immunity day one of you is walking out of here safe from sunday's elimination
01:29but that's not all there is to be excited about
01:37today there is an epic prize on the line
01:47this challenge is about something i always have a second stomach for ice cream
01:52and today you need to come up with your very own ice cream flavor
02:05the theme is winter
02:11we want an ice cream that cures our winter blues
02:13uh-uh now to showcase your ice cream we also want you to bring us a masterchef worthy dish to go
02:20with it but make sure that the ice cream is the showstopper whoever turns out the most impressive
02:27creation will not only win immunity but the ultimate prize
02:35curtis tell them what it is whoever wins this challenge will have their ice cream rolled out
02:40across the country in coal stores starting tomorrow for a limited time until sold out
02:54wow wow would that be cool absolutely to have my ice cream on the shelf yes it would be super cool

03:18mom would probably buy all of them out so i need to make a few more but i'm all about a good ice cream
03:23tub the couch a spoon and just relaxing okay to make your ice cream and your dish you'll have 90 minutes
03:31the pantry and garden are open oh it's good you have everything you need to create the kind of
03:39ice cream that people will sprint to the shops for rain hail or shine curtis take them away you guys

04:01oh thank you wow what do i need the macadamias i was looking for the same thing go faster benny please
04:21what do i like to do in winter it's sit by a fire get nice and cozy and have a warming drink so i'm going
04:29to make a dark and stormy ice cream dark and stormy it's one of my favorite cocktails it's all about
04:34rum ginger beer a little bit of fresh citrus i'm thinking this could be a nice little winter treat
04:39the flavors that you get out of rum are all those warm wintery spices ginger beautiful warming spice
04:45of course it's going to work i'm using queensland rum using queensland ginger in the ice cream itself
04:51so to go with the ice cream i figure i'll just keep going down the queensland route so we're
04:55going to do a queensland pumpkin pie um some little candied macadamias and then we'll utilize the rum
05:02again and make a nice rum butterscotch literally the pumpkin the rum the sugar the ginger and the
05:08lime are all grown within like 50 kilometers of the same place in queensland but it's the whole dish
05:15this competition is getting harder and harder if i win this challenge it doesn't really matter what
05:20else happens from here on out i've got a spot on the shelf at coles with my name on it that's pretty

05:39how are you i'm good thank you john christophe how are you you're gonna smash it yeah
05:43well i'm smashing smashing some strawberries today i'm doing a strawberry ice cream with a black
05:50pepper caramel cream swirl through it this ice cream is inspired by one of the worst dishes in
05:57master chef history which i did in season one which was an infamous strawberry risotto dish andre
06:03what's on the menu champagne and strawberry isotto i have a theory about weird combinations on menus it means one of two things
06:16either the chef is a genius or he's a total idiot
06:27it's horrible
06:27because i like you andre i've swallowed it
06:38when i was uh on the first series of masterchef i was 28 free as a bird hannah and i had only just
06:46started dating and now 16 years later we're married do you know last time we did this we didn't have
06:52any children and now look at us as soon as i was invited back on this series of masterchef
07:01my wife hannah straight up said yep do it like she did all these years ago when we were much younger
07:07and the three kids now um are super excited about it so you weren't born when i was on the show
07:13i had no beard yeah and you were you looked different and i was much younger do you remember
07:22the bad food that i did a strawberry risotto
07:30i really want to redeem myself with this dish this time i'm reinventing the strawberry risotto as a
07:37rice pudding season one strawberry risotto the balance was off there wasn't enough sweetness
07:45this time around with my strawberries for the strawberry pudding i'm going to have the strawberries
07:50cover them with balsamic honey and some orange juice and put them in the oven so they're nice and
07:56caramelized and really rich flavor of strawberries and hopefully it's enough to pull me across the line
08:01if it does then that will be my best moment in the master chef kitchen whoever wins this challenge is
08:10such a lucky duck because it takes years to develop a product usually but today we're giving them a
08:16chance to shortcut that whole process and the other thing is their product is going to be available for
08:22the whole of australia how amazing is that so so good it's like national appeal like that yeah i think
08:30the chance to have your name on the product around australia it is a fantastic experience yeah i would
08:38love to be over there yeah and try myself i don't want to be the debbie downer here but we're all
08:44talking about yes the ice cream yes the ice cream they also have to create a master chef worthy dish
08:50to really showcase that ice cream the dish needs to be good the ice cream needs to be good and then we're
08:56getting someone with immunity all right i feel like i'm pulling out the big guns today like it's been
09:03a dream of mine for a long time to have a product in a supermarket my ice cream is sticky date pudding
09:10so the ice cream is a date and cinnamon ice cream with a butterscotch swirl and a brown sugar crumble
09:15everyone loves sticky date pudding i can see the people lining up now at cole's ready to get it so
09:21i just have to nail it now that i've come up with my ice cream flavor i need to decide on what
09:28dish to make to pair with the ice cream let's go lozzy let's smash it yeah i think one of the biggest
09:34things i need to focus on today is making sure that my dessert itself actually makes my ice cream stand out
09:40even more it needs to accompany that ice cream but make it shine and pop and be the hero of the dish
09:49so it's a huge decision

10:19again cola oh my god wow so i'm having a bit of fun with it today one of my favorite ice cream combos
10:27is spider so cola ice cream i feel like it's just such a fun and exciting combo it is so important
10:35to stand out with an ice cream flavor i know if i was walking down the aisle and i saw spider ice
10:42cream on the shelf i would definitely give that a try i just wanted to create something today it's a
10:48little bit different something that would be really unique and you can't get anywhere because i would
10:52love to win i think it's such an amazing prize hey sarah hey what are you doing um vanilla and cola ice
11:02cream cola ice cream i'm excited about this so what do you put a vanilla cola ice cream with well i'm
11:12thinking it's winter so it's like what would go with the spices in this so sort of a spice pumpkin pie
11:17and then i'm going for a really delicious pork crumble think you can be the next master chef only one

12:36and be into the top 10. i think top 10 is such a huge milestone in this competition so not only is
12:42the prize incredible but that top 10 spot is the ultimate she's going in

13:03when i think of winter wonder i think of masala chai it's warm it's earthy it's spicy
13:11beautiful a chai is such a huge part of my upbringing my culture there's always a reason in your
13:20life to have chai you want to have a chat you have chai you want to chill out you have chai you want
13:24to warm up you have chai and i really want the judges to taste a masala chai ice cream i think
13:30their minds are going to be blown with the flavor profile hello guys oh we're here for the good times
13:39so this is masala chai ice cream and i'm trying to literally punch in as much of that masala tea flavor
13:46so when you eat the ice cream we're hoping for you guys to just visualize a cup of tea yeah definitely
13:52very warming and wintry and it's just about whether you get the balance of those spices right yeah i can
13:57do that i can do how much do you want to win today that would be so good it would be so good curtis is
14:02in the room okay i'm making masala chai ice cream looks like i reckon it'd be sick it would be sick

14:19and i'm like tea and biscuits it's a match made in heaven so why don't make a masala chai ice cream
14:24sandwich the biscuit's going to be orange and cardamom i'm going to do a saffron and an orange
14:29cream on top i want the biscuits to be nice and thin they also need to have a right amount of chew you
14:37know so when you buy into the ice cream sandwich you don't want it to be like crumbling in your
14:40mouth and you're tasting the biscuit and the ice cream separately it kind of needs to come together
14:45so i just want to make sure that i do this to perfection 30 minutes down and one hour to go

15:34screaming for ice cream today yeah what's the flavor so i'm doing double caramel with a ginger cookie so
15:39i'm actually going to turn it into ice cream sticks so dip it into some chocolate and yeah
15:48today i'm going chai tea with all sorts of chai flavors cinnamon cloves cardamom star anise i'm
15:56really thinking about just nailing all the flavors in this and um i'm gonna go all in
16:01today i'm making a spiced winter baklava ice cream so baklava ice cream on the bottom
16:09this beautiful pillow shard is going to sit on the top and it's going to be the classic
16:13naturally in between i'm going to have this like a beautiful lemony syrup that i'm going to
16:17drizzle around as well to have my own product on the shelf would be like massive i can see my whole
16:23family lighting up and taking photos in front of the fridge sarah should i come chuck some of these
16:32on your bench i'll kill you personal joke
16:43is it going to be a bit of kiddies subject yeah i've got a choc fudge ice cream i'm going to have
16:49marshmallows chewy cookies um and hundreds and thousands on the top it's going to be like you
16:55scoop into a big surprise how old are you i never ask you mate good luck yeah thank you
17:08how do you feel having your face on the on the ice cream it's shopping and they can see you on the
17:13shelf i'm going to do a a spiced banana ice cream that's going to have a tamarind ripple through it
17:21so sweet but also sour at the same time and i'm going to put all of that on top of a delicious
17:26coconut bread and butter pudding with some toasted pineapple as well i'm going tropical with these
17:31flavors today because even though it's winter you can sit on your couch enjoy this ice cream be taken
17:35away to your little paradise in your hammock with a pina colada the base of the ice cream's also got lots
17:39of spices and it's got cloves it's got cinnamon it's got vanilla uh coffee and a really nice warm
17:44winter spices so when you eat it although it's cold it's going to give you that warmth
17:49the risk with bread and butter pudding is that it tends to look like stodgy brown
17:54mush and in order for me to win this challenge i'm going to have to really elevate that today
18:01i really want to be in top 10 it's obviously a major step in getting to top one
18:06in a back to win series particularly top 10 means a hell of a lot
18:12i'm not going to sugarcoat it for you you just have 45 minutes to go let's go
18:26today's a good day because we get to try 11 different ice creams and desserts to go
18:37with them are you guys excited about anything in particular i'm compelled with andre i like
18:42the fact that he's going to try to mix pepper strawberries it is fantastic when you get it right
18:48i cannot believe he's revisiting he's being clever though he's actually doing more of a rice pudding
18:55i love that jamie is playing this right to my sweet spot because he's doing a bit of a take on
19:02a rum and raisin he's doing a dark and stormy he's using rum there's some spice in there um i'm super
19:09excited about what he's making yum yeah that sounds cool laura's doing a sticky date ice cream yeah i'm
19:14very excited about that classic but it can't be boring
19:20yum look so i've decided to pair my sticky date ice cream with an actual sticky date pudding and
19:28butterscotch sauce i know the flavors of the dish will complement the ice cream really well but it
19:34could be a little too sweet so i'm going to do a callum today and add lots of different elements and
19:40different textures to this dessert to make sure that the balance is right and make sure that that
19:47ice cream really sings and shines laura hello hi so that's just a bit of butterscotch sauce to douse
19:56the sticky date when it comes out of the oven that will be part of the dessert the ice creams are both
20:01in the churner doing their thing how classic are you going is this just sticky date no no no no so
20:06what if it's okay okay let's do it so the ice cream the ice cream which has got the swirl and the
20:11cookies are doing their thing great the cake's in the oven the butterscotch is so it gets done
20:15the chocolate cookie crumb is going into the oven caramel's about to go on and then i'm going to start
20:20charring and pickling pineapple and then i'll go to the garden and pick some pick some little like
20:24pineapple sage i feel like you've got so many elements oh there's just too much i started i would like
20:31literally put out my piece of paper to write down everything i need to do and i was like i just
20:34don't even have time to do that are you gonna get it all done oh i don't know
20:45if you're not charted you could be parted 22 minutes to go oh my god
21:14where are you going i have no idea i'm walking like i know what i'm doing come back come back
21:28i am so happy that this worked
21:31so this is what you do you dip no no i'm making a sandwich so i'm gonna have choc fudge ice cream in
21:46the middle and i'm going to be serving you guys like cookie brownie sandwiches going to be around
21:50the outside of the ice cream it's going to be like hundreds and thousands this is just you know what
21:55you'll be buying at the shops and then this is my little will we okay call it off everyone

22:06hello perfect timing what are you making so today i'm making this spiced up baklava ice cream
22:14it's a winter baklava more spice than usual um that's what i'm kind of trying to smell it yeah it
22:18smells amazing it's gonna be simple classic delicious where's my balls so i've got my double
22:25caramel ice cream with the ginger cookie and the salted caramel swirls in its mould the plan is to
22:30dip them into the um caramelized white chocolate with 20 minutes to go i feel like i need 25 but
22:36i've got 20 and that's what i'm going to do with him

22:49it's getting you my cola and vanilla ice cream's almost churned i'm going to be serving it on top
22:55of a pumpkin tart with a bacon crumble my pastry is delicious got the bacon pumpkin custard is there
23:06it's a pretty weird and unique combination but i love it even if it's a magical dish
23:13that cola and vanilla ice cream is the hero here i definitely think i'm up for a chance of winning this
23:20challenge
23:24yum there's a lot to do with only 12 minutes to go
23:36my sable biscuits turned out really nice and thin and the ice cream tastes like masala chai like
23:45literally i'm so pumped i'm going to serve the masala chai ice cream sandwiches with mascarpone
23:51orange zest and saffron cream
23:54i'm not going to distract you i've got the beautiful orange and saffron gel as well
23:59i think it will add the lightness to my dish i think orange citrus it just adds another node of
24:07complexity without taking away from the masala chai
24:10dark and stormy ice cream's churned it's tasting delicious pumpkin pie is in the oven i'll pump the
24:19temperature a little bit just to try and get it set in time
24:24they look a bit blonde what do you think what do i think yeah yeah the custard's delicious and it
24:29just needs to set yeah so it's supposed to be in there for about nine minutes okay tested this so
24:35okay okay it's a waiting game now and we cross our fingers hope that custard sets perfectly hope i
24:42don't overcook it and hope i've got enough flavor in but 10 minutes who the hell knows what's going to
24:47happen come to check out all your bits all the bits all the bits and bobs
24:52there's so much i can't actually figure oh you had to write them down in the end aren't you funny
25:03otherwise you'll leave something off won't you yeah with my sticky date ice cream today i am going
25:07to serve some sticky date pudding itself add in there some charred pineapple pickled pineapple
25:13it's cozy quite that like rum pineapple caramel or a little chocolate crumb i have so many elements
25:26on the go my head is like exploding right now is that you or me that's you
25:37that's the moment of truth yep good luck girl
25:39my ice cream is still churning the texture is looking really good but i need this ice cream to
25:48be extra firm so i can fold my butterscotch swirl and crumbs through but this is ridiculous
25:55there's seven minutes to go and my ice cream is not churned to where it needs to be
26:02i really need to think of a plan b right now to save this ice cream i'm not chewing
26:07i decide to take my ice cream to the liquid nitrogen station i know i can blast
26:14cold liquid nitrogen into that ice cream as quickly as possible
26:17to get a really firm mixture so that swirl can go through it
26:23give the people what they want a bag of an ice cream five minutes to go
26:27oh my god is everyone growing as crazy as i am
26:38i've got my spiced banana with tamarind ripple ice cream it looks delicious i think i've nailed this
26:45it's pretty good too i've got my coconut bread and butter pudding and now i've just got to get it on the
26:51plate looking absolutely stunning but the problem with bread and butter pudding is it's a pretty
26:55basic looking dish it's hard to make this look good i'm just making a little bit of caramel to
27:00brush on the top of this pudding to make it glisten a bit it's going to look sexy when it's got
27:04everything on top of it i'm going to place a nice circle of the bread and butter pudding
27:09grilled pineapple on top of that and then the crowning glory will be the tempered chocolate and
27:14some little pink peppercorns to make it really pop i really hope i'm going to win i'd love to have
27:18immunity sunday i've just been through a big challenge yesterday i'd rather not go through
27:21another how's the rice pudd slash risotto guy it's getting there interesting yeah right
27:32i had to i had to so long as you redeem yourself andre it's all about redemption po
27:38so i've been tasting my strawberry risotto through the cook and it tastes a lot better than
27:42it did 16 years ago because 16 years ago it was rubbish plating up the first thing i do is put my
27:50baked strawberries on the base of the plate then cover it with a strawberry risotto and then finally
27:56finish it with some sugar and brulee it i want a nice crack and crunch a little bit of texture to
28:02the dish before the ice cream goes on top it's not good the clock is ticking and then i realize that i
28:11have a problem with my ice cream it's not setting you gotta get it done in time andre uh having
28:16problems with the ice cream have you used nitro before no no i've never used nitro before and i look
28:26over there and there's steam and smoke it looks uh it looks dangerous but there's no choice here we go
28:34what do i do yeah glasses paddle put your ice cream in there yeah yeah yeah use that slowly slowly start
28:40beating that i'm not i'm not i don't have a license for this it's fine i got you go go go go go go
28:47bring us something that we can eat straight out of the tub two minutes to go
28:59so i've got three ice cream sticks not five but three is definitely better than one
29:05yeah they're set all guns blazer let's go i start to plate i get a little bit of the butterscotch sauce
29:13to go underneath my tart so it sticks there nicely i grate over some of the fresh macadamia a little
29:18bit of lime zest and a little sprinkle of salt i do a massive beautiful rocher for my ice cream this is
29:26100 queensland on the plate it's queensland pumpkins it's queensland ginger it's queensland rum it's queensland
29:32they're macadamias is is it delicious i think so here's the scoop 30 seconds to go

31:43is a unique blend it's definitely something i haven't seen at the shops before
31:49oh they look great look at that piping and i can guarantee you it's delicious
31:56what ice cream have you made i made masala chai ice cream sandwiches i've got masala chai ice
32:02cream in the center got a cardamom and orange biscuit and i did like an orange saffron mascarpone
32:10cream on top with a little bit of orange saffron gel

32:43smashing a masala chai ice cream of yours yeah i think i could i think i definitely could
32:54i thought that it was actually a really good combination of flavors with the whole dessert as
32:58well for me the orange and the saffron and the masala they're mates i'm just trying to get andy and
33:06his pjs out of my mind for a moment there's not a lot to them made it worse um depender this ice
33:16cream is a real triumph it's silky smooth it's full of that chai masala you almost get a little kick
33:23from it the dish is also delicious the shortbread has a little bit of saltiness to it the saffron
33:30plays its part without overwhelming that's a really successful dish well done thank you
33:35depender i also love all the work that you did with the dish itself
33:40i think it's one of the most successful ice cream sandwiches we've seen in here
33:45and your masala chai ice cream is really really lovely the texture of it is beautiful really nice and
33:52silky and i really love that it's got this slightly tannic quality to it

34:23there are so many good cooks here and this immunity it's a nice little confidence boost as

35:34rum but if you're trying to make an ice cream for the whole country that's not a bad thing you know i was
35:38eating wrong and raisin ice cream when i was six and my mum happily let me order it you know i think
35:44this could be enjoyed by everyone really good job thank you jamie you have accomplished an extraordinary job

36:39your ice cream has a wonderful texture these pops of boysenberry and the shards of honeycomb give it
36:46a really nice crack and pop and it's very textural while being really smooth which is just gorgeous
36:51the one thing when i say berries is i think of summer sitting on a cold wintry day with the open
36:58fire going the last thing i think of is berries but that doesn't mean that the ice cream doesn't work

37:33is this strongly tea flavored would go straight out of a tub it feels like this plate of dessert is such
37:40a whole package so you're kind of your own best friend and worst enemy in this one yep next up sarah

41:20let me dissect this one i don't think that this is like the flavor that every human on the face of
41:33this planet is going to look at and go i need to try that but then i guarantee if they ever tried it
41:38they'd be like i'm hooked on that banana can be full on and you roasting them like has accentuated that
41:46flavor profile as well but then adding the coffee has just pulled it back then that tamarind has just
41:54like ripped through it as for the rest of the dessert it really did just play a nice little background

42:25so it's double caramel with ginger cookie ice cream bit of a citrus salad and a citrus veil over the top
42:30it's feeling a little soft when i went through it all um it was mainly the ginger biscuit and then the
42:38caramel but i just wanted some ice cream oh really i don't think there was enough ice cream
42:44to hold it all together declan this is my birthday surprise ice cream so you've got a vanilla
42:51cardamom ice cream chocolate brownie caramel and a chocolate fudge ripple sauce through it
42:56the sprinkles the marshmallow they're contrasting textures which is nice and served as an ice cream
43:03sandwich it's actually really nice because in in all truth the ice cream's a little sweet for me
43:08but when you eat it with the ice cream sandwich it sort of balances it out a little bit thank you
43:18the next dish we'd like to taste belongs to laura
43:21i'm feeling like i've definitely taken a risk today by adding lots of different flavors and
43:30textures to this dish i feel like it's going to go one of two ways it's going to completely overpower
43:38and you're not going to taste that ice cream or every single mouthful is going to work and that ice
43:42cream is going to sing the risk is definitely worth taking today i mean your own ice cream on the shelves
43:50at cole's is up for steaks and i'm going all in laura what's your ice cream sticky date pudding
43:59so you've actually got sticky date cake underneath soaked in the butterscotch sauce
44:04there's a pineapple caramel pickled pineapple roasted pineapple and a chocolate crumb
44:11all right i reckon we dig in
44:34if i was competing against you today i'd be really annoyed that i didn't think of that
44:37the thing that it really demonstrates is that you don't have to reinvent the wheel you can pick
44:45something that everyone knows and loves and if you riff on it really cleverly and intelligently
44:51you can get a brand new dish and you just adding those pineapple bits the pickled the roasted just adds
44:57enough nuance to the dish that it kind of turns it into something else for me sticky date pudding is
45:03so delicious and the idea of turning a quintessential winter pudding into an ice cream yeah i think is
45:10really smart what you've done is you've given us all those flavors that we love about sticky date pudding
45:17the butter the richness the caramel the date and you've turned it into this velvety like masterpiece
45:25the ice cream is fabulous half of this challenge was like coming up with a concept that when you're
45:34walking down the aisles and you're like browsing and you see it and you go i have to try that
45:40i need it i need it i want it and i'll buy it and this is an example of just that then the dessert
45:49it's for me the rum soaked pineapple was just absolutely genius because there's like sweetness in
45:57in the butterscotch the sweetness in the cake the sweetness in the ice cream it does do go a long
46:03way just to pulling that all back the caliber of your dish is tremendous you're very good you're fantastic you

48:26a world record setting like high okay i wanted a bit more oomph in the rice pudding or risotto whatever
48:34you want to call it it just felt quite mono and i know it was probably just there to kind of
48:39be a foil for everything else but i just want to bore out of that element the ice cream does have
48:44all of those kind of beautiful naughty notes of the pepper and strawberries and balsamic and for me
