01:37this challenge is about something I always have a second stomach for ice cream
01:48and today you need to come up with your very own ice cream flavor
01:57the theme is winter
02:02we want an ice cream that cures our winter blues
02:08now to showcase your ice cream we also want you to bring us a master chef worthy dish to
02:15go with it but make sure that the ice cream is the showstopper whoever turns out the most
02:21impressive creation will not only win immunity but the ultimate prize

04:17it's sit by a fire get nice and cozy and have a warming drink
04:22so I'm gonna make a dark and stormy ice cream
04:25dark and stormy is one of my favourite cocktails
04:27it's all about rum ginger beer a little bit of fresh citrus
04:30I'm thinking this could be a nice little winter treat
04:32the flavours that you get out of rum are all those warm wintery spices
04:36ginger beautiful warming spice
04:39of course it's gonna work
04:40I'm using Queensland rum using Queensland ginger in the ice cream itself
04:45so to go with the ice cream I figure I'll just keep going down the Queensland route
04:49so we're gonna do a Queensland pumpkin pie
04:52some little candied macadamias
04:54and then we'll utilise the rum again and make a nice rum butterscotch
04:59literally the pumpkin the rum the sugar the ginger and the lime
05:03are all grown within like 50 kilometres of the same place in Queensland
05:06but it's the whole dish
05:07I like that

05:12if I win this challenge it doesn't really matter what else happens from here on out

05:41today I'm doing a strawberry ice cream
05:43with a black pepper caramel cream swirl through it
05:47this ice cream is inspired by one of the worst dishes in MasterChef history
05:52which I did in season one which was an infamous strawberry risotto dish

06:38Hannah and I had only just started dating
06:41and now 16 years later we're married
06:44do you know the last time we did this we didn't have any children

06:50as soon as I was invited back on this series of MasterChef
06:55my wife Hannah straight up said yep do it
06:58like she did all these years ago when we were much younger
07:00and the three kids now are super excited about it

07:17the strawberry risotto
07:19I really want to redeem myself with this dish
07:27this time I'm reinventing the strawberry risotto as a rice pudding
07:32season one strawberry risotto
07:36the balance was off there wasn't enough sweetness
07:39this time around with my strawberries for the strawberry pudding
07:42I'm going to halve the strawberries cover them with balsamic honey and some orange juice
07:47and put them in the oven
07:49so they're nice and caramelised and really rich flavour of strawberries
07:53and hopefully it's enough to pull me across the line
07:55if it does then that will be my best moment in the MasterChef kitchen
07:59whoever wins this challenge is such a lucky duck
08:05because it takes years to develop a product usually
08:08but today we're giving them a chance to shortcut that whole process
08:12and the other thing is
08:14their product is going to be available for the whole of Australia

17:13it's gonna have a tamarind ripple through it
17:15so sweet but also sour at the same time
17:17and I'm gonna put all of that on top of a delicious coconut bread and butter pudding
17:21with some toasted pineapple as well
17:23I'm going tropical with these flavours today
17:25because even though it's winter
17:26you can sit on your couch enjoy this ice cream
17:28be taken away to your little paradise in your hammock with a pina colada
17:31the base of the ice cream's also got lots of spices and it's got cloves
17:34it's got cinnamon
17:35it's got vanilla
17:36coffee
17:37and a really nice warm winter spices
17:39so when you eat it although it's cold it's gonna give you that warmth
17:43the risk with bread and butter pudding is that it tends to look like stodgy brown mush
17:48and in order for me to win this challenge I'm gonna have to really elevate that today

25:40texture is looking really good but I need this ice cream to be extra firm so I
25:44can fold my butterscotch swirl and crumbs through but this is ridiculous
25:49there's seven minutes to go and my ice cream is not churn to where it needs to be
25:54I really need to think of a plan B right now to save this ice cream I'm not
26:02chewing I decide to take my ice cream to the liquid nitrogen station I know I can
26:08blast cold liquid nitrogen into that ice cream as quickly as possible to get a
26:13really firm mixture so that swirl can go through it
26:17give the people what they want a bag of an ice cream
26:21I've got my spiced banana with tamarind ripple ice cream it looks delicious I think I've nailed this
26:39I've got my coconut bread and butter pudding and now I've just got to get it on the
26:46plate looking absolutely stunning but the problem with bread and butter pudding is
26:50it's a pretty basic looking dish it's hard to make this look good I'm just
26:54making a little bit of caramel to brush on the top of this pudding to make it
26:56glisten a bit it's gonna look sexy when it's got everything on top of it I'm
27:01gonna place a nice circle of the bread and butter pudding grilled pineapple on top of
27:05that and then the crowning glory will be the tempered chocolate and some little
27:09pink peppercorns to make it really pop I really hope I'm gonna win I'd love to

27:19how's the rice pudding slash risotto guy it's getting there interesting yeah right
27:26so long as you redeem yourself Andre it's all about redemption Poe so I've been
27:34tasting my strawberry risotto through the cook and it tastes a lot better than it
27:37did 16 years ago because 16 years ago it was rubbish plating up the first thing I
27:44do is put my baked strawberries on the base of the plate then cover it with a
27:48strawberry risotto and then finally finish it with some sugar and brulee it I want a
27:54nice crack and crunch a little bit of texture to the dish before the ice cream goes on top
27:59it's not good the clock is ticking and then I realize that I have a problem with my ice cream it's
28:08not setting you gotta get it done in time Andre I'm having problems with the ice cream
28:12I've never used nitro before and I look over there and there's steam and smoke it looks looks
28:25dangerous but there's no choice here we go what I do yeah glasses paddle put your ice cream in there
28:32yeah yeah use that slowly slowly start beating that I'm not I don't have a license for this
28:38it's fine I got you go go go go go go bring us something that we can eat straight out of the tub
28:44so I've got three ice cream sticks not five but three is definitely better than one

36:42And it's very textural, wobbly and really smooth,
36:44which is just gorgeous.
36:46The one thing when I say berries is I think of summer.
36:50Sitting on a cold, wintry day with the open fire going,
36:54the last thing I think of is berries.
36:56But that doesn't mean that the ice cream doesn't work.

39:58three-quarters of the way into the experience,
40:01just eating it on its own.
40:02I think it would be one
40:04that you would need to eat by itself
40:06because with all the flavours
40:07that you've got going on here,
40:09it kind of dilutes that cola flavour.

40:52I've got a spiced banana and tamarind ice cream.
40:56A coconut, bread and butter pudding
40:59and grilled pineapple.
41:22Let me dissect this one.
41:24I don't think that this is like the flavour.
41:26that every human on the face of this planet
41:29is going to look at and go,
41:30I need to try that.
41:31But then I guarantee if they ever tried it,
41:33they'd be like, I'm hooked on that.
41:36Banana can be full on.
41:38And you roasting them,
41:39like has accentuated that flavour profile as well.
41:43But then adding the coffee
41:44has just pulled it back.
41:46Then that tamarind
41:48has just like ripped through it.
41:51As for the rest of the dessert,
41:52it really did just play a nice little background music
41:57for the ice cream.
41:59I thought the bread and butter pudding
42:00was less successful than the ice cream.
42:03I thought it was maybe a little too bready
42:04and not quite custody enough.
42:07But the ice cream was really standout.

42:17So it's double caramel
42:21with ginger cookie ice cream.
42:23Bit of a citrus salad
42:23and a citrus veil over the top.

42:27When I went through it all,
42:29it was mainly the ginger biscuit
42:31and then the caramel.
42:34But I just wanted some ice cream.
42:36Oh, really?
42:37I don't think there was enough ice cream
42:39to hold it all together.

42:42This is my birthday surprise ice cream.
42:45So you've got a vanilla cardamom ice cream,
42:48chocolate brownie, caramel
42:49and a chocolate fudge ripple sauce through it.
42:52The sprinkles, the marshmallow,
42:54they're contrasting textures, which is nice.
42:57And served as an ice cream sandwich,
42:59it's actually really nice
43:00because in all truth,
43:01the ice cream's a little sweet for me,
43:03but when you eat it with the ice cream sandwich,
43:05it sort of balances it out a little bit.

43:20I'm feeling like I've definitely taken a risk today
43:23by adding lots of different flavours and textures
43:25to this dish.
43:28I feel like it's going to go one of two ways.
43:31It's going to completely overpower
43:32and you're not going to taste that ice cream
43:34or every single mouthful is going to work
43:37and that ice cream is going to sing.
43:39The risk is definitely worth taking today.
43:43I mean, your own ice cream on the shelves at Coles
43:46is up for stakes and I'm going all in.
43:49Laura, what's your ice cream?
43:52Sticky date pudding.
43:54So you've actually got sticky date cake underneath,
43:57soaked in the butterscotch sauce.
43:59There's a pineapple caramel, pickled pineapple,
44:02roasted pineapple and a chocolate crumb.
44:06I reckon we dig in.
44:28If I was competing against you today,
44:30I'd be really annoyed that I didn't think of that.
44:32The thing that it really demonstrates
44:36is that you don't have to reinvent the wheel.
44:40You can pick something that everyone knows and loves.
44:43And if you riff on it really cleverly and intelligently,
44:46you can get a brand new dish
44:47and you just adding those pineapple bits,
44:50the pickled, the roasted,
44:52just adds enough nuance to the dish
44:54that it kind of turns it into something else.
44:56For me, sticky date pudding is so delicious.
44:59And the idea of turning a quintessential winter pudding
45:03into an ice cream...
45:04Yeah.
45:04..I think is really smart.
45:07What you've done is you've given us all those flavours
45:10that we love about sticky date pudding.
45:12The butter, the richness, the caramel, the date.
45:16And you've turned it into this velvety, like, masterpiece.
45:20The ice cream is fabulous.
45:22Half of this challenge was, like, coming up with a concept
45:28that when you're walking down the aisles
45:30and you're, like, browsing and you see it
45:32and you go,
45:33I have to try that.
45:35I need it.

45:39And this is an example of just that.
45:43Then the dessert.
45:45It's, for me, the rum-soaked pineapple
45:47was just absolutely genius.

45:55there's sweetness in the ice cream.
45:56It does go a long way just to pulling that all back.
