Staff have been fundraising to support those with motor neuron disease this year, taking on a cycling challenge and donating all proceeds from one of their flavours to the cause.

00:00Today is National Fudge Day and the Fudge Kitchen in Canterbury has invited me to
00:13their store to see how they make their iconic product. I've now been here two
00:17years. I really love it. Most of what I do is selling fudge, sampling fudge,
00:23tempting people into wanting fudge and sometimes filming the fudge. Well in the
00:28spirit of National Fudge Day, it's time for me to try and make some fudge.
00:33Oh wow. This is for you. Stand right. Come right in for me. Ready? Let's do it. Three, two, one, we're going to go up. There you are.
00:42So bring it in and flip it over and stroke it back. And that's it. Just repeat this
00:47process now. Easy to. Go again. Back over. Halfway. It's all right. It's all right.
00:52It's all good. You know what? Fold it over. Oh what's going on? It's okay. You got it. You got it.
00:57Remember to put your hand over the top. That's the one. You're going to go into the line here and go
01:01right over. So you're going to go in and over like that. In and over like that. And sit it over like that.
01:06That's it. I'm going to go over again. That's it. That's it. And you just need to speed up a little
01:13bit now. So you can push through. And you will find, there you go. That's it. Nice and easy.
01:19And open the door. So don't be afraid to put your hand back there. Just to sort of protect the slide.

01:37He described the ideal weight of a slab to be 185 grams and put me to the test to see if I could beat him.
01:43And I managed to beat the expert at his own game. Basically, we take our core ingredients,
01:55sugar, cream, water, salt, and then any natural flavors that you want to put in there. So, for
01:59example, a sort of caramel. We have a homemade caramel recipe that's made in-house just sure
02:04in water. We plop it in the pan and we just boil it to temperature or what flavor you're making. So
02:09sometimes if you've got something like berries in there, you might alter your temperatures slightly.
02:13Then you pour it on the marble slab. And then a key part of the fudge making is actually just
02:18letting it sit as long as you can. For National Fudge Day, the staff took part in a special charity
02:22event raising money for motor neurone disease. For National Fudge Day this year, we worked with
02:26the Motor Neurone Disease Association doing a bike ride. So we all got exercise bikes in our six stores
02:32and we rode as far as we can in Canterbury. We managed 150 miles in between everyone.
02:38Swedening the deal with a bag of fudge, I think it's safe to say I've thoroughly
