00:00So it started four years ago with Derby Lane upstairs, which is obviously incredibly girly pop and flowers and very feminine. We are the queens of dry ice and disco balls and neon lights. So it's very feminine. It's very over the top, very Instagram heaven. And we love it. We're all about the hen do's and parties and it is a venue for the girls.
00:25Down here has been several different concepts. We've done a kind of pop-up idea down here. So we've had kind of AFS Glasgow. We had a 2D speakeasy. We had a pop-up Christmas venue. When our Christmas speakeasy ended, we wanted a different concept. Something that kind of showed Derby has changed. The company's changed. It's kind of evolved over the last four years.
00:50So downstairs, I think it was important to have something that was a bit more grown up, quite elegant. We wanted something that was a bit moody. Upstairs is very bright and colourful.
01:03I think we wanted something that was just a bit more a reflection of, obviously, our core clientele who have been with us. We're all getting a bit older.
01:10And I think for me it was important, and when we spoke to our owners, it was important to have a concept that also worked for where we are.
01:20We had a look at kind of what was going on around us. There wasn't massive amounts of kind of sports bars or places you could watch sports.
01:29I don't think there's massive amounts of places where women can feel really comfortable to go and watch sports, whether it's an old firm or gymnastics or basketball.
01:38I think in Glasgow we have a really big push on football, which I love, but I think we are lacking other sports.
01:50So with Bar Brooklyn, we wanted a seven day a week venue that could offer that.
01:57So now I'm talking to loads of cool people. I'm talking to women's gymnastics clubs and women's football.
02:02And it's not obviously just for the girls. I think because we're so used to Derby Lane, we wanted something a bit more masculine and a bit more grown up.
02:09And I do love, you know, when you come and see her, she is moody and there's a lot going on.
02:15I think we are all in this industry inspired by what others are doing. I think I'm really lucky.
02:20I think we're really lucky that normally if you've been in this industry a little while, as much as everyone's competitive with each other,
02:27we all work quite closely together. We're really lucky with our neighbours. We're lucky with this industry.
02:33I think Glasgow has so much going on right now. I think having so many incredible restaurants around us make us think a bit deeper into what we're doing,
02:44forces us to change it up. We can't stay as stagnant as maybe you could before.
02:50And I think it forces us all to look at what's kind of going on out with Glasgow.
02:56But I would say Glasgow is, you know, Scotland's biggest food city.
