00:41Bursa, the former capital of the Ottoman Empire, is a UNESCO World Heritage Site recognized for its role in the empire's rise.
00:49It also thrived as a major silk trade hub on the Silk Road.
00:54Here in Koza Han, stunning 15th century inn, silk cocons were once traded and travelers would stop to rest along the route.
01:03Today it's one of Turkiye's most iconic silk markets where a century's old tradition lives on.
01:09The city also continues to embrace the values of silk weaving and carpet making in places like the Umur Bay Silk Production and Design Center.
01:19What makes Bursa's silk special goes beyond historical ties?
01:24Bursa'nın coğrafyası aslında.
01:28Bursa biliyorsunuz volkanik bir yanardağ olan, eski adıyla keşiş dağ olan Uludağ'ın eteklerinde kurulmuş bir şehir.
01:36Dolayısıyla Bursa'nın suları pH'i nedeniyle farklı.
01:39Bu farklılıkta, bu yumuşaklıkta Bursa'nın ipeğine farklı bir parlaklık kazandırıyor.
01:45Bursa ipeğinin dünya ipeklerinden farkı da bu parlaklığı açık.
01:49At this center, visitors can observe the process of silk making from the cocoon to the final product and it offers training for people to learn and pass on the art of silk and carpet making.

02:09Just a few kilometers away lies Jumalikazik, a poskar-like village with well-preserved Ottoman houses.

02:29Jumalikazik's authentic charm comes from its original layout and use of natural materials.
02:51The stone, wood and mud brick houses with colorful facades reflect early Ottoman design while the village's historic character can be seen in its sloped cobblestone streets.
03:07I'm back in Bursa and I'm starving.
03:10I've heard that there's a must-try dish, one of Turkey's most famous.
03:15Let's find out what makes it so special.
03:17I'm talking about Bursa Doner Kebab, better known as Iskander Kebab, named after its inventor Iskander Effendi, who created it around 160 years ago.
03:31Its tanner lamb, the key ingredient in the dish, is sliced from the doner, laid onto cubed pide bread, topped with melted butter and spiced tomato sauce and served with creamy yogurt and aubergines.
03:43And as I saw for myself, cutting the doner is not as easy as it looks.
03:48Can I try to do this?
03:51Let's see, like this?
03:53Bravo!
03:55Almost.
03:56Almost.
03:57For the Iskander family, making doner kebab is about more than how it tastes.
04:01Bir defa, temel madde şu, her şeyin en iyisi, her şeyin tereddüksüz en iyisi, en iyisi dediğiniz şey, madde olarak ise, bunun bir de manevi tarafı var.
04:16The key is to keep traditions alive, ensuring their ancestries can not defend this creation continues for future generations and customers.
04:24Mmm, chocolate is a tea.
04:30Mmm.
04:30Mmm.
04:31Mmm.
04:31Mmm.
04:32Iskander kebab is more than just a dish.
04:36It's a tribute to Turkiye's cuisine, where flavor, tradition and history come together.
04:41Wow, that was really good.
04:48This region may be a hidden gem, but it's one I won't forget in a hurry.
04:52Görüşürüz.
