And still, for many years, they weren't celebrated.

They weren't considered luxury ingredients.

that you could make an amazing meal out of

They were always the side dish.

Right now, we're putting on an onion tartare dish.

So nobody really likes onions.

Nobody talks about onions.

They don't understand how hard onions work for you.

All the research I did pointed me in this direction

that tipping is bad.

It's morally bad.

Basically, I'm outsourcing part of my payroll,

my human resources department, to my customers.

The states and Canada are really the only two countries

where people are dependent on their tips to live.

And it seems like the rest of the world has moved on,

so why haven't we?

We're not the most sustainable industry for women.

Everybody has to start paying attention to their tips.

Everybody has to start paying their employees more

so they have access to better health insurance.

We have to figure out, as a restaurant industry,

how to be able to provide maternity leave and paternity

leave and real sick days and whole jobs for people

who have to go home and care for a loved one.

The only way I knew how to do that was to go no tipping.

And I think that's just sort of like we like to celebrate.

Female chefs, and I like to get more female chefs' names

out there and to keep sort of pushing

the boundaries of what we consider to be acceptable
