00:05The secret to those coffee drinks
00:07are generally the creamers.
00:09I've got five fun, festive, fall creamers
00:13that you can make at home.

00:16Fink maple glazed donut.
00:18Caramel apple crisp creamer.
00:20A very subtle slice of pumpkin pie.
00:23Apple chai creamer.
00:25Cinnamon brown sugar.
00:27It's just the one for me.
00:29Have you ever stopped to check the ingredients
00:32on the coffee creamer bottles?
00:35Micellar, casein, monoundiglycerides,
00:39potassium phosphate, cellulose gel, carrageenan.
00:43Why?
00:45Why?
00:45Creamer should just be like milk and cream
00:49and a little bit of sugar, right?
00:51That's what we're gonna do.
00:52First one I'm gonna show you
00:53is fall's most popular coffee creamer,
00:55pumpkin spice creamer.
00:57Everyone wants to know how to make it.
00:59No need to buy it at the store.
01:00You have most everything at home.
01:02I'm going to start by making just the basic creamer.
01:04Do you know that creamer, really,
01:06forget all that stuff, is only two ingredients.
01:08We're talking milk or cream and sugar.
01:11The way to get the best is to use sweetened condensed milk.
01:14This is how it's a little bit thicker
01:17than just plain milk.
01:18Mm, mm.
01:19I'm gonna try not to do that all day.
01:21Lick the spoon.
01:22And then I'm going half and half.
01:24I love half and half in my coffee.
01:26This is more of my everyday thing.
01:28And then just give it a good mix
01:29and then you just keep this stored in your fridge
01:31and you've got your homemade coffee creamer
01:33with two ingredients.
01:35Sounds a lot better than mono and diglycerides.
01:37What are those anyway?
01:42Delicious.
01:43Okay, so now I'm gonna make our five
01:45and then taste all five.
01:46So now you have your base
01:47and for this one we're just gonna add to it.
01:50I am adding in just a little bit of pumpkin
01:51to really give it that pumpkin pie spice flavor.
01:56It's already sweet,
01:57so I'm only adding like half the amount of maple syrup.
01:59And then the recipe calls for pumpkin spice,
02:02pumpkin pie spice.
02:03I don't know if you've been to the store lately,
02:05but the prices are a little ridiculous
02:06and I bet you have everything in your pantry to make it,
02:10so you shouldn't really buy that anyway.
02:11It's usually cinnamon, nutmeg, ginger, and cloves.
02:16And then I'm also just adding in a little vanilla extract.
02:18We're doing our holiday baking, you know,
02:21but in the form of creamer.
02:22And then we just shake it up.
02:24We don't want any chunks.
02:25We want this as smooth as possible.
02:29Mm, pumpkin spice creamer, done.
02:32On to the next.
02:34Next up, if this doesn't sound like fall,
02:36I don't know what does.
02:37Caramel apple crisp creamer.
02:39Yes, please.
02:41We're gonna have the warm buttery flavor of caramel
02:43plus the crispness of apples.
02:46I'm starting with some apple cider.
02:48You could also just use apple juice here.
02:50And then I'm just gonna place this on the stove
02:52and let it be reducing down.
02:55That smells good.
02:56I'm also gonna add in a pinch of cinnamon.
02:58That's just gonna reduce down
03:00and make a apple-flavored syrup.
03:02And then we're still just gonna keep it super simple
03:04with our ingredients.
03:05Instead of sweetened condensed milk,
03:07we're using the dulce de leche,
03:09which is caramel-based milk.
03:11Okay, our apple cider reduction has reduced.
03:15It thickens on its own as it cools,
03:17but I'm gonna use it while it's hot
03:19to kind of soften up that dulce de leche.
03:21The smell right now smells like an apple crisp.
03:24It smells like it's been baking all day.
03:26And now, just like the other one,
03:28we'll whisk in our half and half.
03:30Again, you can use whatever milk you want at this point.
03:33What I love about this one
03:34is that you get that caramel color.
03:37So you get the flavors of an apple crisp, caramel,
03:40and then it also looks like that.
03:41I feel like it also needs a little splash of vanilla.
03:44Why don't we give her a taste?
03:47It's funny how that works.
03:48What I like about this versus something you might buy
03:52is that you can taste everything.
03:54It doesn't have that artificially fake apple flavor.
03:58You'll be able to pick that out.
04:00This is real.
04:01Cute, cute.
04:02Caramel apple crisp creamer, done.
04:06Nicole, what if we don't want dairy?
04:09What if we want an oat creamer?
04:11I got you.
04:12So we're gonna do apple chai oat creamer.
04:15For all you non-dairy people.
04:18First step to making the apple chai creamer
04:22is to make apple chai tea.
04:27So I'm going in first with a little bit of water,
04:29our apple cider.
04:31And then I'm throwing in 10 tea bags.
04:34And I just let it all come up together.
04:36So once we have our apple chai tea,
04:39we're gonna reduce it with a little bit of sugar
04:41and make it like a syrup.
04:43And then we'll stir it into our oat milk creamer.
04:47Okay, let's make our oat milk creamer.
04:48All right, oat milk creamer.
04:50I'm going to soak some oats in boiling water.
04:55Get some hot water, pour it over the oats,
04:58and let it sit for about 10 minutes or so.
05:01All right, once they have soaked,
05:02they've absorbed up all that liquid
05:04and they're super soft.
05:05So we're gonna drain them and rinse them off.
05:08Okay, so now these oats just go straight into the blender.
05:11A lot of these oat milk recipes have oil in it
05:14and one and a half cups of cold water.
05:18And then to sweeten this up, I'm going in with some dates.
05:21I like that dates also kind of thicken it up a little bit.
05:24And then that's it.
05:25I'm just going to.
05:32Now we're just gonna strain it.
05:34Get out all the solids.
05:36Looky here.
05:37See how thick and creamy that is?
05:40That's good looking.
05:41Impress myself with that one.
05:44Our tea is done.
05:45It is so fragrant in here.
05:47I've kind of let these sit 10 minutes steeping
05:51and now I'm just gonna take them out.
05:52You get like a hint of that apple in the back.
05:55What?
05:56Hint.
05:57A hint, it is a hint.
05:58In with a cup of brown sugar.
06:01Then I'm gonna do a half a cup of white sugar.
06:04Mm, I see what you're doing there, Starbucks.
06:07Okay, so now I'm gonna bring this back to a simmer
06:10and let it reduce until it gets syrupy.
06:14Okay, our chai apple tea is super rich and concentrated
06:19and that's what you want.
06:20So I'm gonna pull it off.
06:22It's gonna thicken even more as it cools.
06:24All right, we have our creamy oat milk creamer right here.
06:28Our reduced apple chai tea.
06:31And then we're just gonna mix the two together.
06:35So you only need about like half to three quarters
06:37of the amount or however much flavor of that chai
06:40into your creamer that you want.
06:42Mm, that's the surprise hit of the day.
06:45I didn't think I was gonna like that as much as I do.
06:47That is delicious.
06:51Delicious.
06:52Three down, two to go.
06:54So here's a creamer without sweetened condensed milk.
06:56This is just about as natural as it gets.
06:59This is cinnamon brown sugar creamer.
07:02This is gonna be my favorite.
07:03This is gonna be my go-to.
07:04This is really like the way I wanna sweeten my coffee
07:08all the time.
07:09So going in mostly brown sugar
07:12and then a little bit of white sugar,
07:15a little pinch of salt, and then some cinnamon.
07:18To that, I'm going in with a cup of heavy cream
07:20and then we're just gonna cook that
07:21until all that sugar dissolves.
07:24And since we're cooking it all together,
07:26we're not gonna get all those big flecks of cinnamon.
07:28Although for this one,
07:29kinda like the pumpkin spice creamer,
07:32I'm okay seeing little flecks of cinnamon.
07:34I mean, you wanna tell the people there's cinnamon in here.
07:36Once all that is dissolved and is one uniform mixture,
07:39I'm just gonna take it off the heat
07:41and stir in our half and half or milk.
07:43This is your rich and creamy delight.
07:46Did not mean to be that aggressive with that.
07:50All right, everything all mixed in.
07:51Smells delightful.
07:54And now I'm gonna stir in, I'm gonna go milk this time.
07:59That's the easy one of the day.
08:01We've had the surprise one.
08:03We've had the popular one.
08:05This is our easy one.
08:09Also known as my favorite one.
08:11This would also make a really cute little hostess gift,
08:13you know?
08:15Our own homemade creamer with no weird ingredients.
08:19Okay, one more to go.
08:21These are for you donut lovers out there.
08:24Maple glazed donut creamer.
08:27Okay, this is another really easy one,
08:29going just with the classic creamer mixture.
08:32And then we're adding in everything
08:34that it takes to bake a donut,
08:38except no yeast and flour required.
08:41For this one, I'm going a cup and a half of heavy cream
08:45and three quarter cup of milk.
08:47And with our sweetened condensed milk.
08:49All right, now to turn it into the maple glazed donut part,
08:53third cup of maple syrup.
08:55And then also a little vanilla, a little cinnamon,
08:58just a pinch.
09:00As that sweetened condensed milk gets mixed up
09:03into the liquid, it melts right into it.
09:05So it blends into a uniform thick mixture.
09:08For the surprise ingredient,
09:10it's just gonna kind of make it a little cozy.
09:12So I'm gonna take a little butter and melt it
09:14and whisk it in.
09:15Give it one little shake.
09:18Now let's see.
09:20Think maple glazed donut.
09:23Nailed it, nailed it.
09:25Chilling, and now we're gonna serve up all five.
09:31Are we ready?
09:33Let's start with our pumpkin spice.
09:35Here's our pumpkin spice creamer
09:36and straight into our coffee.
09:39Right off the bat, tastes like a very subtle slice
09:42of pumpkin pie.
09:43It's not like you're eating pumpkin pie in your coffee,
09:46as are some of those creamers
09:48that have that artificial flavor.
09:50It's what you want.
09:52Caramel apple crisp, I'm calling the flavor of 2024,
09:55you know?
09:56You do, you get that little subtle apple,
09:59just a hint of spice.
10:01This is like my kind of like fall flavored creamer.
10:04It's like not too sweet, not too spicy.
10:08Perfect.
10:09Okay, let's do an iced coffee.
10:10Apple chai creamer.
10:12Now this is our oat creamer,
10:13so it's not gonna be as creamy as the others.
10:17How is it?
10:18It's sophisticated.
10:18It's sophisticated and delightful at the same time.
10:21You taste all those spices in there.
10:23With the ice, it's quite delightful.
10:25That's delicious.
10:26Cinnamon brown sugar.
10:27We know this is gonna be a winner.
10:29It's just the one for me.

10:32It is so just creamy.
10:35You get the cinnamon, you get the warm brown sugar.
