Making a delicious dinner in the middle of the week has never been so easy. In this video, Nicole shares and cooks five pasta dishes in less than 30 minutes, using only five ingredients for each. 00:00 I'm giving you five pasta dinners with five ingredients
00:03 in under 30 minutes.
00:05 I have to first establish a few parameters.
00:08 Pantry staples don't count as ingredients.
00:10 If you don't have a stocked pantry,
00:12 I need to know about it,
00:13 and I need to do a video on how to stock your pantry.
00:14 These items I have in my pantry are free game.
00:17 Garlic, salt, pepper, oils, seasonings, fresh herbs.
00:21 I always have lemons.
00:23 I think that's fair, that's fair.
00:25 Right out of the gate, I'm going with
00:26 kind of an oldie but goodie.
00:28 The thing is, while it may be old,
00:29 I've never made it, so let's do it.
00:32 What I like about this like shallot and chive flavor
00:34 is that it already has the shallots in there,
00:37 so I don't have to count those as an ingredient.
00:38 Into the Borson goes grape tomatoes.
00:41 This is gonna create a sauce.
00:42 And then just a little bit of olive oil, salt and pepper.
00:46 Fun fact, I collect pepper grinders.
00:48 And then a little crushed red pepper.
00:50 They put crushed red pepper in it, and I love that.
00:53 400 degree oven for about 20 minutes,
00:55 trying to keep this whole dish in under half an hour.
00:58 That's two ingredients, the third is the pasta.
01:00 I'm using linguine for this.
01:02 I know you've heard this one before,
01:04 but you do want your pasta water heavily seasoned with salt
01:07 because it's the only time to really
01:09 get it absorbed into the noodle.
01:11 If you wait 'til after and try to salt it at the end,
01:14 it's gonna be way too salty,
01:15 and the salt's just gonna sit on the surface of the noodle.
01:17 Number four, rotisserie chicken.
01:19 I'm just gonna shred up this chicken,
01:20 and then just kinda chop it up a little bit.
01:23 Get your pasta water.
01:24 Looks good, smells good.
01:27 I'm gonna burst these tomatoes a little bit
01:30 to create some juices, stir it all up.
01:33 Fifth ingredient is spinach,
01:34 or you can sub it for something else, a different vegetable.
01:37 Oh my gosh, do you smell that?
01:38 In goes the pasta, hot pasta water.
01:41 Now what I really wanna do,
01:45 is just a little squeeze of lemon.
01:46 It delivers, just as promised.
01:51 There's so much flavor, it's like the butter,
01:53 the cheese, and the cream all together.
01:56 Mm, I promised you that it wouldn't all be Italian spaghetti.
02:00 This is kind of like your meatless Monday meal,
02:02 so I'm just gonna use spaghetti noodles.
02:04 You can use whatever noodle you want.
02:06 Some edamame, this is gonna be our protein,
02:08 and then just like an Asian-style salad kit.
02:10 Some cucumber for crunch,
02:12 and then whatever kind of like Asian stir fry sauce.
02:16 I think this one might be a 20-minuter,
02:19 once your water starts boiling, and it is.
02:21 Salt your water.
02:22 Let's prep the other ingredients.
02:25 All you really have to do is chop up some cucumber.
02:28 This is one of those times
02:29 you should get yourself a cooking cocktail.
02:31 This is so fast, it's like I hardly have anything to do.
02:35 What would be a good cooking cocktail for this?
02:37 Just my OG, vodka soda.
02:39 Truly one of my favorite parts of the whole day,
02:41 when I pour my little cooking cocktail,
02:43 turn on my music, and cook dinner.
02:45 My friend.
02:55 It's my kind of dinner now.
02:56 When your pasta's just like a minute away from being done,
02:59 go ahead and put your edamame in,
03:00 just to kind of heat it through.
03:01 Back into the pot, crank it on low,
03:06 and then we pour in our sauce.
03:07 Seriously, that looks delicious.
03:10 All right, so fast, the cocktail's still full.
03:12 To me, that's perfect.
03:14 As you dig in, the crunchy vegetables
03:16 are also gonna get coated in the sauce.
03:17 You can add more sauce,
03:19 or you could use a little packet that comes in here.
03:21 I think I might do that.
03:22 The additional accoutrements.
03:24 My mouth is like doing things.
03:28 Oh my God.
03:31 This is a true five-ingredient dinner
03:33 in way less than half an hour.
03:35 I don't know how I'm gonna top this.
03:37 Number three is five-ingredient Cajun pasta.
03:39 I'm gonna actually time this one,
03:41 'cause I wanna see if I can really bring this together
03:43 in under 30 minutes.
03:44 Okay, so the five ingredients here, smoked sausage,
03:47 this is going to naturally flavor the dish.
03:49 Then I found in your freezer section,
03:52 onions, celery, bell pepper, and parsley.
03:56 This one should be like a staple in my freezer.
03:58 Parmesan cheese and heavy cream,
04:00 plus a pantry staple, some Cajun seasoning.
04:03 I'm gonna start by slicing up my sausage.
04:05 I feel like every time I've had this dish,
04:06 the sausage has just been cut in rings or circles.
04:11 When you render, you wanna start kind of in a cold pan.
04:14 That helps the fat slowly release,
04:16 and I'm gonna use that fat as the vessel
04:19 to saute everything else.
04:20 You can sometimes add a little oil just to speed it along.
04:24 Salt in, pasta in.
04:27 Fat is rendering out.
04:29 Looking good.
04:30 Okay, sausage has lots of color.
04:33 Color equals flavor.
04:35 See those little brown bits?
04:36 This frozen seasoning blend is gonna pick that up.
04:39 Just gonna cook that for just a couple minutes.
04:44 Where am I at?
04:48 Okay, so that's sauteed.
04:49 Your heat is up high, and we're gonna stir in heavy cream.
04:52 Just enough to coat it all.
04:54 Then you're gonna bring this mixture up to a boil
04:56 and let it simmer until it thickens up a little bit.
04:59 I'm also gonna go ahead and stir in the Cajun seasoning.
05:02 Just in case.
05:05 And then our pasta goes right in.
05:08 All right, gonna let this simmer for just a couple minutes
05:11 just to come together.
05:11 The pasta's gonna help it thicken a little bit,
05:13 as well as a little Parmesan cheese.
05:16 How's my time looking?
05:18 20 minutes.
05:19 You can see how it's all tightened up,
05:21 coating the pasta and sausage.
05:23 That's an indulgent, delicious dinner.
05:26 This one's an optional, but it was in the seasoning blend.
05:29 So, mm.
05:31 Not only is this so rich, but it is so full of flavor.
05:33 A lot of good saltiness,
05:35 like the perfect amount of saltiness.
05:37 I'm on a roll.
05:38 Let's go to number four.
05:39 While it is Italian, it's not spaghetti.
05:42 Skillet lasagna.
05:44 One, two, three, four, five.
05:46 We're gonna get a lot of flavor from the Italian sausage.
05:49 This is gonna help us eliminate other seasonings
05:52 that we don't have to worry about.
05:53 It's all gonna come together in the skillet.
05:55 You don't have to boil the noodles separately.
05:57 Nothing like that.
05:58 Here goes our sausage.
05:59 I'll do it in a minute.
06:01 It's my first day.
06:03 Just cook and crumble.
06:06 This one's the only one I might be pushing it,
06:08 the 30-minute one.
06:09 In goes half of your jar of marinara.
06:11 You may need more than one jar,
06:13 but it's still just one ingredient.
06:15 Now this is where this whole thing just gets cool.
06:18 Now we take our lasagna noodles
06:20 and we just add them in uncooked.
06:22 You just wanna break 'em apart a little bit.
06:24 Just kinda tuck 'em in all around.
06:26 And then you pour the rest of your sauce on top.
06:28 And then you wanna be sure your noodles
06:29 are covered with the sauce
06:31 because that's what's gonna be absorbed.
06:32 Ingredient number four, ricotta cheese.
06:34 So you just wanna kinda dollop this around.
06:37 I like my ricotta to have a little bit of flavor,
06:38 so I'm gonna season it.
06:41 A little salt, a little pep, a little garlic powder.
06:44 And then we're just gonna let it simmer
06:45 until those noodles are tender.
06:47 So this part's gonna take about 20 minutes.
06:49 Looking good.
06:52 Just put it all in.
06:54 Okay, comment below if you're gonna hold it against me
06:57 that this recipe took longer than 30 minutes.
07:01 Look at that, look at that.
07:03 Although I think like most lasagnas,
07:04 we should let it sit for a minute.
07:06 So go get your wine, come back.
07:08 I especially love using a little parsley
07:11 when I've used jarred things or canned things
07:14 'cause it just kinda adds just that pop of freshness,
07:17 just kinda wakes it all up.
07:18 I'm even shocking myself on this one.
07:21 The noodles look perfectly cooked, look at that.
07:26 This is a winner.
07:30 And now it's time to show you my final trick.
07:32 Perfect for a spring/summer dinner.
07:37 Shrimp pesto penne.
07:38 A little pesto, lemon, some sugar snap peas,
07:41 a little shrimp, and penne pasta.
07:44 All of these have been about finding that ingredient
07:46 that has a lot of other ingredients built in.
07:48 The pesto, we've got our basil, we've got olive oil,
07:51 we've got Parmesan cheese.
07:52 I'm gonna start by just seasoning my shrimp
07:54 with some salt and pepper.
07:56 A little toss.
07:58 These are so good because you want them to stay crunchy,
08:01 therefore they only take like seconds to cook.
08:03 You wanna get the pasta going first.
08:06 Already put the salt in the water.
08:08 Olive oil, this is gonna play a part of our sauce,
08:11 so I'm not being too shy with the oil.
08:13 Shrimp.
08:15 I want my heat to stay nice and high.
08:17 And then just before I flip the shrimp,
08:19 I'm gonna go ahead and add in the peas.
08:21 Now I'm just gonna give this a stir
08:22 until the shrimp are cooked.
08:24 Now for our multi-purpose ingredient, the pesto.
08:27 And I'm just gonna take the pasta directly from the pot
08:33 into this pot.
08:35 And it's okay if a little pasta water gets in here.
08:37 Kinda want that starch to help thicken it up
08:39 and make everything stick to the pasta.
08:42 Look at that.
08:42 Tell me that don't look good.
08:44 Finishing touch.
08:45 The flavor you get straight from the zest
08:47 is just so special.
08:48 Just a squeeze.
08:49 Nothing to it.
08:53 Shrimp too.
08:53 Pasta, crunch, shrimp, sauce.
08:58 This is simplicity at its finest.
