Our reporter, Joe, took a trip down to Southsea to visit the Ripper and Co bar in Southsea to explore all things cocktail based.

Okay, so basically this wonderful page here is like vintage cocktails. So it's

the classic cocktails around the world which I'm sure everyone has tried. We

have espresso martinis, mojitos, a classic Mai Tai, little things like that

that I'm sure people have tried in wherever like bar they go to. Now the

next page here is director's cut. So this is the page where we've taken those

classic cocktails and we've twisted them into our own ripper way. So like I said

the Mai Tai, we do that but we don't do it with rum which is like huh? Everyone

does Mai Tai's with rum but we do it with Disaronno and Apricot Brownie so it's a

completely different shift but it's wonderful. We have stuff like a

traditional espresso martini that we do as a banana version with alcoholic banana

foam on top. We have Turkish Delight martinis, we have Reese's Pieces,

old-fashioned. So we've like had a lot of fun by taking those existing cocktails

and kind of twisting it to be different. This is definitely the page where you can't

find these cocktails anywhere else. So if you have a classic in mind that you

love I'd say give this like give the twister go, you might surprise yourself.

So with the drinks menu myself and two other wonderful guys came up with all

the ideas. Every single one of us has like something different that we designed

for so with me when it comes to designing cocktails I design off of

stuff I hate. Now the reason why it's because if I feel as though if I can

change someone's mind about something like if someone really doesn't like

Turkish Delight so if someone really doesn't like whiskey and they come in

and they give this cocktail a go and they end up liking it I feel like I've

done my job right. So that's how I design. One of the other guys he designs

is he designs cocktails that are classics so like Negroni is a bit more bitter, a bit more sour.

The other guy designs based on sweetness so we're all very very different from

each other and I think that's perfect because we all got all of ideas and put

it into this menu so it's like a little bit of everything really.

So what comes first, I'm going to talk about, because it's kind of obviously they're based on a theme so it's alive, what comes first

kind of the the inspiration from like the movie or the reference or the

or the actual cocktail which is shaped to what? Do you know what, I think it was with a lot of

our cocktails we took the main quotes that they say for movies so obviously

with Frankenstein it's that it's alive, that's such a big statement so why not

make something that actually does become alive. It's all fun and games when you

give them a drink and they're drinking it and they're like loving it but how

about we make it so it's a bit more like immersive so I don't know how we came up

with this idea it's insane to us I think we genuinely just took science lessons

and you took everything that we learned from science GCSEs and just applied it

here so it worked really well. So for our tea we're adding some lovely coffee in there.

That's your coffee base so what we do to get it to have that wonderful banana

flavour is we've got some banana rum, best banana rum by the way, don't

argue with me on this it's amazing. So we add a little bit of that and then we

add some banana liqueur to add a little bit more sweetness in there and lastly

don't kill me we are adding more banana we're gonna add some banana syrup in

there as well and then we add some chocolate bitters in there just a couple

of dashes and then that's literally the drink itself.

So it looks all white but you've just got to let it settle and slowly you'll see the gradient form where it becomes like darker.

So you can like already start to see that it's just turning a little bit more darker, it's literally settling.

And then we add our piste de resistance which is this amazing banana foam.

And to finish it off, for all those people that have sweet tooths, we add a little bit of banana sweeties that they can enjoy with it as well.

And that's it, that's one of our best sellers, the Banoffee Martini.
