00:07 I think food is.

00:09 Food is the one global unifier.

00:14 Everybody can sit down around a table and enjoy good food.

00:17 - I'm most fearful that our children

00:24 won't have the opportunity to experience that.

00:28 - As a species, what are we doing with our time?

00:31 How are we consuming this planet?

00:34 - 50% of the planet's habitat is gone

00:37 because of our agriculture.

00:39 - People don't have a connection to what food really is

00:42 and where it really comes from.

00:44 - To scale our current consumption to 10 billion people

00:48 is simply manifestly impossible.

00:50 We don't have the arable land for that.

00:52 We don't have water resources.

00:55 In other words, we will be forced to change direction.

00:59 - So in the food movement,

01:03 the critical thing is connecting the dots

01:05 between all of these different issues.

01:07 Health, food access, the environment.

01:11 - This system over here is gonna produce food,

01:13 fuels, medicines, and fibers in perpetuity forever

01:16 while increasing the fertility of the soil,

01:18 increasing the biodiversity.

01:23 And the toads are eating my pests.

01:28 - As a hospital system,

01:30 we should be leaders in what healthy food looks like.

01:34 We believe food is medicine in that it can prevent disease

01:38 or if you do have a disease, it can reverse it.

01:41 - We believe that if we connect the learning

01:44 around food and nutrition to other learning,

01:46 that it will stick more

01:48 and that we will have folks when they leave here

01:50 who are more likely to make stronger choices

01:53 around the food that they consume.

01:55 - We need to begin to investigate every aspect of our lives.
