Fried Rice (Nasi Goreng) Recipe (Indonesian food)

Ingredients:

2 cups cooked rice (preferably leftover rice)
2 tablespoons vegetable oil
2 cloves garlic, minced
1 shallot, finely chopped
1 carrot, diced
1 cup cooked chicken or shrimp, diced (optional)
2 eggs, beaten
2 tablespoons sweet soy sauce (kecap manis)
1 tablespoon soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper
Spring onions, chopped for garnish
Fried shallots for topping (optional)
Cucumber slices for garnish (optional)
Instructions:

Heat vegetable oil in a wok or large pan over medium heat.
Add minced garlic and chopped shallot, sauté until fragrant.
Add diced carrots and cook until they start to soften.
If using, add diced chicken or shrimp and cook until cooked through.
Push the ingredients to one side of the wok, pour the beaten eggs on the other side. Scramble the eggs until they are almost cooked.
Mix the eggs with the other ingredients in the wok.
Add the cooked rice to the wok, breaking up any clumps.
Pour sweet soy sauce and soy sauce over the rice, and mix well.
Season with salt and pepper, adjust to taste.
Stir-fry the nasi goreng until everything is well combined and heated through.
Garnish with chopped spring onions and, if desired, fried shallots.
Serve the Nasi Goreng hot, optionally with cucumber slices on the side.
