and I'm making homemade gnocchi

that is so much better than anything you could find

in a grocery store.

If you've ever wanted to make homemade pasta before,

gnocchi is where I would start.

It's almost impossible to mess up

and you most likely already have

all the ingredients on hand.

For gnocchi, I like using russet potatoes

because they are really, really starchy,

which just gives you a great end result.

I also like to roast my potatoes

rather than boil them for the gnocchi.

Boiling them typically just makes them a little more watery,

which means you need more flour to make it,

and I think you get a better result with roasting,

but if you absolutely must boil them

because it is a little bit quicker,

keep them whole and boil them that way.

After you've washed your potatoes well,

poke them all over with a fork

to let steam escape while they're roasting.

You don't need to worry about wrapping these in foil

or anything like that.

You can place these directly on the rack in your oven

and bake these at 400 degrees for about an hour

until a knife inserted into the middle goes in easily.

Once your potatoes come out of the oven,

let them cool down until you can safely hold them

in your hand and handle them easily,

and then cut them open,

scoop out all of the insides into a bowl.

You can get rid of the skins.

We don't need them.

And then run your potatoes through a ricer.

If you don't have a ricer or you've never used one,

I love them for using them on potatoes.

They make the best mashed potatoes.

It's how you can get really smooth, light,

fluffy mashed potatoes.

Now that all of your potatoes are riced,

add in your eggs, flour, and salt,

and mix that just until a dough forms.

Once your dough starts to form together

and it starts forming clumps

and can stick together easily,

that's when you wanna dump it out onto the counter

and finish kneading it into one smooth ball.

At this point, you might be tempted to add more flour in,

but really see if you can get away

with not adding any extra.

The more flour you add, the tougher your gnocchi turns out,

and obviously the less flour you have,

the softer it will be,

and we want really soft, fluffy gnocchi.

Once your dough comes together,

it's time to shape our gnocchi.

So divide your dough into four equal pieces,

and then working just one at a time

to make it a little easier,

roll out each piece to be about a half of an inch thick

into a long rope,

and then cut individual pieces of gnocchi

about one inch long.

After you've cut all of your gnocchi pieces,

roll them in semolina flour on a sheet tray,

and then to get those really iconic ridges of a gnocchi,

we're gonna roll one on the back of a fork.

After you've rolled all of your gnocchi,

bring a pot of salted water to a boil,

place in your gnocchi just in batches,

and cook it off for about two to three minutes

until they start to float to the top.

They should look puffy and a little bit swollen,

just like a dumpling.

Once your gnocchi is done boiling,

add it directly into whatever sauce you wanna serve it with,

like a pesto or a marinara.

We made a really easy brown butter sauce for it.
