Coconut Barfi Ingredients (short version):

2 cups fresh coconut, grated
1 cup sugar
1/4 cup milk
1/4 teaspoon cardamom powder
Instructions:

In a heavy-bottomed pan, combine the coconut, sugar, and milk.
Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture thickens.
Add the cardamom powder and mix well.
Continue to cook, stirring constantly, until the mixture forms a soft dough.
Grease a plate or tray with ghee and pour the mixture onto it.
Spread the mixture evenly and let it cool completely.
Once cooled, cut the barfi into squares or diamonds and enjoy!
Tips:

For a richer flavor, use full-fat milk.
If you don't have fresh coconut, you can use desiccated coconut instead. Just soak the desiccated coconut in water for 10-15 minutes before using it.
To avoid the coconut from sticking to the pan, grease the pan with ghee or butter.
Be careful not to overcook the mixture, or it will become hard and brittle.
You can store the barfi in an airtight container at room temperature for up to 3 days.
