00:37 Antipolo City is a destination for pilgrims,
00:40 tourists, or anyone who wants to slow down
00:43 and revel in the beauty of nature.
00:46 One thing that makes any visitor's treat complete

00:54 It's an iconic snack that dates back to the Spanish period.

01:23 Making suman is fairly easy.
01:25 According to 64-year-old Juanita Sarte,
01:28 who has been in the business for 38 years,
01:31 her recipe stands out because aside from mixing
01:35 a generous amount of coconut milk with glutinous rice,
01:38 she also adds salt to balance the sweetness.
01:42 They put the rice in a wrap made of leaves,
01:44 place three layers of this in a huge pot,
01:47 and boil in water for two hours.
01:50 They later add turmeric powder in the process.
01:53 And voila, suman is best served
01:56 with sugar, cocoa jam, or chocolate.

02:04 More than being a source of income,
02:16 suman has played a big role in the growth
02:18 of the city and its people.
02:20 As Antipolo continues to rely on this heritage food,
02:24 it looks on to the next generation
02:27 to keep the industry alive.
