This has to be the best Reshewala degi haleem made in the authentic way for you.


Ingredients:
-Water as required
-Jau (Barley) ¾ Cup
-Gandum (Wheat) ¾ Cup
-Chana daal (Split bengal gram) ½ Cup
-Masoor daal (Red lentil) ¼ Cup
-Mash daal (White lentil) ¼ Cup
-Moong daal (Yellow lentil) ¼ Cup
-Chawal (Rice) tota ¼ Cup
-Water or as required
-Water 3 litres or as required
-Cooking oil ½ Cup
-Darchini (Cinnamon sticks) 2
-Sabut kali mirch (Black peppercorns) 12-15
-Tez patta (Bay leaves) 2
-Pyaz (Onion) sliced 2 medium
-Boneless beef large pieces ½ kg
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Hari mirch (Green chilli) paste 1 & ½ tbs
-Lal mirch powder (Red chilli powder) 1 & ½ tbs or to taste
-Namak (Salt) 1 tbs or to taste
-Dhania powder (Coriander powder) ½ tbs
-Haldi powder (Turmeric powder) ½ tbs
-Garam masala powder 1 tsp
-Elaichi powder (Cardamom powder) ½ tsp
-Dahi (Yogurt) whisked 1 Cup
-Water 4 Cups or as required
-Namak (Salt) ½ tbs or to taste
Prepare Tadka:
-Cooking oil 4 tbs
-Pyaz (Onion) sliced 1 small
-Adrak (Ginger) julienne
-Pyaz (Onion) fried
-Podina (Mint leaves) chopped
-Hara dhania (Fresh coriander) chopped
-Chaat masala
-Hari mirch (Green chillies) sliced

Directions:
-In a large bowl,add water,barley,wheat,split bengal garm,red lentil,white lentil,yellow lentil,rice,mix well & wash thoroughly then rinse with water.
-Add water & let them soak overnight & stain.
-In a daig,add soaked lentils & water,mix well & bring it to boil,cover & cook on low flame until tender (approx. 2-3 hours).
-Stir & mash in between,if required,add 1 cup of hot water,if too thick in consistency & mix well.
-In a pot,add cooking oil,cinnamon sticks,black peppercorns,bay leaves & mix well.
-Add onion,mix well & fry until light golden.
-Add beef & mix well until it changes color.
-Add ginger garlic paste,green chilli paste,red chilli powder,salt,coriander powder,turmeric powder, garam masala powder,cardamom powder & mix well.
-Add yogurt,mix well & cook until oil separates (4-5 minutes).
-Add water,mix well & bring it to boil,cover & cook on low flame until tender (approx. 1 hour).
-Remove bay leaves,cinnamon sticks & discard them.
-Now add prepared beef gravy in lentil mixture & mix well.
-Now mash well while cooking with the help of wooden masher until desired consistency (cooking time approx. 1-2 hours).
-Adjust consistency by adding 1 cup hot water.
-Add salt & mix well.
Prepare Tadka:
-In frying pan,add cooking oil,onion & fry until golden.
-Now add prepared tadka in daig & mix well.
-Garnish with tarka oil,ginger,fried onion,mint leaves,fresh coriander,chaat masala,green chillies & serve!
