Ingredients:

1 fresh coconut
1 packet (about 7g) of unflavored gelatin
1 cup water
1/2 cup sugar (you can adjust the sweetness according to your preference)
A pinch of salt (optional)
1 teaspoon vanilla extract (optional)
Instructions:

Crack open the fresh coconut and collect the coconut water in a bowl. You can do this by puncturing the soft eye of the coconut with a knife and letting the water drain out.

Scoop out the coconut flesh using a spoon or coconut scraper. Be gentle to avoid getting any shell pieces into the flesh.

Rinse the coconut flesh to remove any leftover shell bits and cut it into smaller pieces.

In a blender, add the coconut flesh and 1 cup of water. Blend it until you get a smooth coconut puree.

Strain the coconut puree through a fine mesh strainer or a cheesecloth into a bowl. Press down with a spoon to extract as much liquid as possible. This coconut milk is what we'll be using to make the jelly.

In a separate small bowl, add the gelatin and about 1/4 cup of cold water. Allow it to bloom for 5 minutes.

In a saucepan, heat the coconut milk over low to medium heat. Add the sugar and stir until it dissolves. You can also add a pinch of salt and vanilla extract for extra flavor if you like.

Once the sugar has dissolved, add the bloomed gelatin to the saucepan. Stir continuously until the gelatin fully dissolves and the mixture is well combined.

Remove the saucepan from the heat and let the mixture cool slightly.

Prepare a mold or individual serving cups. You can use any container of your choice.

Pour the coconut mixture into the mold or cups.

Let the jelly coconut cool to room temperature, then cover with plastic wrap and refrigerate for at least 2-3 hours or until the jelly sets completely.

Once the jelly has set, you can serve it as is or garnish it with some toasted coconut flakes or fresh fruit.
