00:00 Hi guys, it's Elise from My Cupcake Addiction and today I'm going to be showing you how
00:09 to recreate this amazing frozen snow globe cake.
00:13 I've already done frozen cake pops on my channel but I've had an overwhelming amount of requests
00:18 for a full-size frozen cake.
00:19 And I wanted to do something that was a little bit different to a traditional cake.
00:22 So today I've created this frozen snow globe cake.
00:25 It's gorgeous, it's effective, but above all, it's really really easy to replicate.
00:29 I hope you guys love what I've come up with.
00:31 To recreate this gorgeous cake, you're going to need some frozen characters.
00:35 These ones are quite small and they came in a set.
00:36 I actually bought them on eBay really cheap but there are loads of frozen characters available
00:41 in all sorts of toy stores at the moment.
00:43 I've also got a 4 inch cake board.
00:44 It's up to you if you want to use a cake board or if you just want to cut a circle out of
00:47 a piece of thick cardboard.
00:48 And I've got a corresponding size circle cutter.
00:51 I'm using a 9 inch white cake board to display my cake and I've got that on a decorating
00:55 turntable.
00:56 I'm using a fishbowl style of bowl so it's really nice and round.
01:00 You could also use a candy jar.
01:01 But you want to make sure the opening is not too large.
01:03 Mine is the same size as that 4 inch cake board and that cookie cutter.
01:06 I've got some water and some snowflake plunge cutters.
01:09 You can use any cookie cutters you like here.
01:11 But I love these plunge cutters because they actually imprint the snowflake and give it
01:14 a lot more detail.
01:16 They're really widely available on eBay.
01:18 I'm using white fondant and I've got 2 paintbrushes, one's for dry work, one's for wet.
01:22 A serrated edge knife, a spatula, an offset spatula.
01:26 I've got some luster dust, just a pearl shimmer luster dust, bit of an optional extra.
01:31 I've also got some of these little white nonpareil sprinkles which I didn't end up using.
01:36 I've got some small snowflake sprinkles as an option in place of those snowflake plunge
01:40 cutters.
01:41 And instead of frosting today, I'm using Nutella.
01:43 It saves you having to make frosting and it's absolutely delicious.
01:46 I've also pre-baked just the bottom half of a giant cupcake using my giant silicone cupcake
01:51 mold so you will need both the mold and the baked cake for this video.
01:55 If you haven't baked a giant cupcake with us before, I will leave a link to our How
01:59 to Make a Giant Cupcake series in the description box below.
02:02 And you only need the bottom half of that cupcake.
02:04 You don't need to bake the top half.
02:06 Off to the side, I've got some cornflour and a shaker, a zip lock bag and a pair of scissors.
02:10 And I've got some melted white chocolate that I've tinted just a nice light shade of frozen
02:15 blue.
02:16 To form the base of your snow globe, we're going to tip that melted blue chocolate or
02:19 candy melts straight into that clean dry silicone cupcake mold.
02:23 You can just shake it down the sides particularly for that first coat so you've got a really
02:27 nice even coating.
02:28 And then you just want to shake out any excess so that it's not a particularly thick coating.
02:33 Pop it off into the fridge to set.
02:35 While that's setting, you can pop down a bit of cornflour.
02:36 We're going to roll out this fondant but you're going to roll it really nice and thick so
02:40 it's still pretty much 6mm thick.
02:43 We're going to take the 4 inch circle cutter and cut 2 circles the same size out of that
02:47 nice thick fondant.
02:49 And then you want to take a little bit of water and just apply that to your cardboard
02:52 base.
02:53 This is just going to act like a little bit of a glue.
02:55 So a little bit of water all the way around and take one of your 4 inch circles and stick
02:59 it straight down on top of that 4 inch cake board.
03:02 Use your fingers just to smooth off the edges so they've kind of got like a little bit of
03:05 a rounded edge to them.
03:06 And then a bit more water directly on top of your glass bowl.
03:09 Once again going to act like a glue.
03:10 Your second 4 inch circle goes on top there.
03:13 Using your hands, you also want to take off that kind of sharp ridge and just smooth it
03:17 down so that it becomes flush with the bowl and make sure that it's really nice and in
03:21 the line of that top 4 inch circle of the actual bowl.
03:25 You can take a little bit of your luster dust if you want here.
03:28 It's a bit of an optional extra but I'm using my dry brush to apply dry luster dust directly
03:33 to that dry fondant.
03:34 That gives it a bit of a shimmer and kind of gives it that icy snowy type effect.
03:38 I'm going to do that to both the top circle of fondant and also the circle of fondant
03:42 that's going to go inside our snow globe.
03:44 At this point, you want to take your glass bowl and stick it straight down on top of
03:47 that fondant base.
03:49 It's actually going to cut off kind of a little bit of the edgings and it's just going to
03:52 give you a guide so that you can use your fingers to tuck that fondant right inside
03:56 so that it's going to come within the confines of the opening of your glass bowl.
03:59 With the first coat of your chocolate base set, you can now pour in almost all of the
04:03 remaining of your blue chocolate.
04:05 And for this second coat, I actually use the spatula to drag the chocolate up the sides.
04:09 That first coat's cold and the second coat will set quite quickly so you do want to work
04:13 quite fast here.
04:14 Off into the fridge for that one to set.
04:16 While it's setting, we're going to carve up the base of our cupcake.
04:19 So you want to shave off the sides of your giant cupcake.
04:23 This is so that it's nice and smooth and also so that it actually fits inside that giant
04:27 chocolate cupcake case.
04:28 You want to carve just the top layer of your cupcake.
04:31 You don't have to come all the way down to where you've carved away those sides, just
04:35 so long as it's got a relatively flat top on it.
04:37 And then cut it in half in the center so that we can fill it with delicious Nutella.
04:42 When your set giant cupcake case comes out of the fridge, you want to just gradually
04:46 release each of the sides before rolling it all the way down.
04:49 I don't recommend setting these in the freezer because the freezer will actually make them
04:52 too brittle and more likely to crack.
04:54 Turn your silicone cupcake case right back around the right way and then you want to
04:58 take your giant chocolate case and stick it back in.
05:00 This just gives it a little bit more support while we're stacking it.
05:03 Taking your Nutella now and I'm going to use the offset spatula.
05:05 You can also just use a spoon or a regular spatula.
05:08 I'm going to give the inside of the case a nice coat of Nutella so that when we actually
05:12 cut into that cake, the chocolate sticks to the sides of the cake and it doesn't fall
05:17 away.
05:18 With that nice coating done, I'm going to put the smaller section, so the base of my
05:20 giant cupcake base in and spoon in another generous amount of Nutella.
05:26 Of course you can use chocolate ganache, you can use any frosting you like.
05:29 I just opted for Nutella because it's quick, easy and delicious.
05:32 On goes that top layer of giant cupcake and then you just want to fill it in with more
05:35 Nutella.
05:36 You want to make sure that you're scraping it nice and flat here so that your Nutella
05:40 is not bulging over the top of the edges of your giant cupcake case.
05:44 Lift up your cake board and flip it so the good side is touching that Nutella surface.
05:49 Flip it back the other way and you'll have your cake positioned.
05:51 Lift off that silicone case and you'll have your beautiful base for your frozen snow globe.
05:56 And you can use your finger or a dry tissue just to clean up any Nutella that's coming
06:00 out around the edges.
06:01 But don't be too fussy because we are going to disguise this.
06:03 A little bit of melted blue chocolate and we're going to stick that base board covered
06:08 in fondant straight down onto our chocolate cupcake base.
06:12 Spend a bit of time positioning those characters so you're happy that they're perfectly positioned.
06:16 And before you stick them down, you want to take that bowl and just rest it over the top
06:19 to make sure that no part of your Elsa, Anna or Olaf are sticking over the edges where
06:23 that bowl is going to affix.
06:25 When you're happy with the positioning, a little bit of melted blue chocolate on the
06:28 base of each of them and just a really little bit.
06:30 It's going to act like a glue and glue your 3 characters straight down onto that fondant
06:35 to make sure they're not going to move around in transit.
06:37 To affix your dome, you want to put the remainder and there won't be much left of your melted
06:41 blue chocolate into that ziplock bag.
06:43 Just snip off a very fine tip and we're just going to use this like a bit of a piping tip
06:47 to quickly pipe a bit of a thin sausage of blue chocolate all the way around that 4 inch
06:52 disc.
06:53 Working quickly before that chocolate starts to set, you want to gently place that bowl
06:56 directly down onto that little chocolate seal and that's going to act like the glue that
07:00 holds our bowl in place.
07:01 I took the end of my paintbrush and just used it just to get into that gap and smooth that
07:05 chocolate down all the way around to neaten it up a little bit.
07:08 Now you want to take some more of your white fondant and roll out a really nice thin snake
07:12 of fondant and then a little bit of water, just a really little bit, all the way around
07:16 the base of your snow globe.
07:18 It's going to act like your glue so you can drape your snake of white fondant around the
07:21 base and it's going to have something to stick to.
07:23 I just used my fingers here just to push it into all of those little indents.
07:27 This is doing a couple of things.
07:28 It's finishing the look of your snow globe, neatening it up but it's also covering any
07:31 of those Nutella stains that might have come out when you positioned your base.
07:35 I also opted for just a thin blue satin ribbon and I just tied that in a nice little bow
07:40 around the section where the globe is attached to the base just to neaten it off.
07:45 If you're using the luster dust or shimmer powder, you can just use your dry brush to
07:49 give a nice light coating all over that blue base, once again just to give it that kind
07:53 of snowy, icy shimmer.
07:55 A little bit more of that cornflour down and we're going to roll out the remainder of the
07:58 white fondant really really thin.
08:00 You want this to be quite nice and thin.
08:02 And then you want to use your snowflake cutters.
08:04 Make sure you give them a good wipe around on the bench before plunging if you are using
08:08 these plunge cutters.
08:09 And you'll see why I love them.
08:10 Check out that pattern.
08:11 It's so easy and just gorgeous.
08:13 You want to cut out several of these beautiful little snowflakes for our decorations.
08:17 To affix them to the base of the snow globe, we're just going to use a little bit of water.
08:21 So less is more when it comes to the water but do make sure that you're taking it right
08:24 out to the tips of the snowflakes and then just using your finger, just literally glue
08:30 them on to the side of the cake.
08:32 Once you've got snowflakes all around the base, and I did 6 or 7 I think, you just want
08:36 to take a couple more snowflakes and we're going to affix them to the actual glass dome
08:41 on the rear behind Anna and Elsa's head.
08:44 This way when you look at the dome, it looks like you've got big and small snowflakes actually
08:48 falling from the sky and gives that dome a little bit of dimension, ties it into the
08:52 rest of the cake.
08:53 Once again, using my dry brush and a bit of that luster to give all of those snowflakes
08:57 a bit of shimmer.
08:58 And then we're going to position down your other 3 characters.
09:01 So you've got Olaf, Sven and Hans.
09:03 Once again, position them roughly before adding a little bit of melted blue chocolate to glue
09:07 them firmly into place and your frozen snow globe cake is complete.
09:11 When it comes time to serve your snow globe, you want to take a knife, slide it underneath
09:15 that glass dome and that cardboard disc and just twist.
09:19 That'll pop it straight off that chocolate base and then use a hot knife just to slice
09:23 the cake as normal.
09:24 This is great for a smaller party.
09:25 It serves about 8 to 10 guests.
09:27 I hope you guys have loved this frozen snow globe cake.
09:29 Make sure you give it a like and give it a share if you know somebody else that loves
09:32 frozen and as always, thanks very much for tuning in to My Cupcake Addiction.
09:36 Bye!
