00:07 and they're also rather polarizing because one either loves or hates the onion. I happen
00:15 to love the onion. Let's look at the lineup.
00:22 We'll start with the yellow onion. They add great flavor to most soups, stews, and pretty
00:29 much any dish with a protein. Beef, fish, chicken, that kind of thing. And if you have
00:35 a recipe that calls for onion but doesn't specify, the yellow onion will stand in perfectly
00:42 every time. And I like them in a caramelized onion and bacon tart.
00:48 And next, the white onion. This is a little milder than the yellow onion and because of
00:54 that is excellent in salads, in sauces, and is definitely the onion of choice for all
01:01 things Mexican. Like mixed with cilantro to go on top of a taco.
01:06 And last, my favorite, the red onion. Because of this little beauty's milder flavor and
01:12 gorgeous color, it shows up in a lot of uncooked recipes. And one of my favorites is the classic
01:19 mango salsa.
01:21 Okay now that we have that down, let's learn how to cut an onion into a dice. Take half
01:26 a peeled onion with root end intact and make small vertical slits up to but not through
01:33 the root. Then make two horizontal cuts and finally cut through creating the dice.
01:40 Of all the old wives tales on how to cut an onion without crying, the best is simply to
01:45 use a very sharp knife. That will minimize squishing the onion, thereby sending the onion
01:52 juice up into the air, getting into your eyes and making you tear. Or you could simply wear
01:59 onion goggles.
