Kashmiri kulche (namkeen)
Ingredients
-Maida 2 cups
-Salt 1/2 tsp
-Baking soda 1/4 tsp
-Sugar 1 tbsp powdered
-Yeast 1/2 tsp
-Eggs 2
-Ghee 1/2 cup melted
-Sesame seeds as required
-Yellow food color 2 pinches

Direction
-Beat 2 egg whites and 1 egg yolk and set aside the 2nd yolk for coating.
- In beaten eggs add melted ghee, sugar, salt and baking powder. Mix well.
-Mix together yeast and sifted flour.
-Add liquid mixture in dry flour mixture in batches and knead to make soft yet compact dough.
-Add milk if dough feels dry.
- Cover and leave for 1 hour.
- Roll the dough lengthwise and divide into equal portions.
-Take one portion and press gently in hands to make flattened balls.
-Add 2 pinch yellow food color in yolk and mix.
-Brush kulche with colored yolk and sprinkle sesame seeds.
-Bake at 200 °C for 25 -30 minutes.
-Cool down completely on wire rack and store in airtight jar for upto 2 weeks.
