Yemeni cheesemaker Abdulslam Thabit crouches over an open fire to produce one of Taez's local delicacies, the smoked 'Taezi' cheese, which can be seen stacked across local markets. The cheese is smoked using different types of plants, which extends the shelf-life of the cheese and gives it its trademark brown colouring.
