Gola Kebab Pulao & Shahi Kulfa | Chef Shireen Anwar

Mince 600 gm
Chili powder 1 tbsp
Roasted & crushed cumin 1 tbsp
Coriander roasted & crushed 1 tbsp
Allspice 1 tbsp
Turmeric ½ tsp
Green chilies chopped 1 tbsp
Ginger garlic paste 1 tbsp
Rice ½ kg
Water as required
Onion sliced 1 cup
Yogurt ½ cup
Tomatoes chopped 2
Green chilies 2
Mint chopped 2 tbsp
Coriander leaves chopped ½ cup
Coriander powder 1 tsp
Chili powder 1 ½ tsp
Cumin seeds 1 tsp

In a bowl, add mince, salt, chili powder, coriander powder, allspice, cumin powder, mint, turmeric, coriander, green chilies and onion, grind these well in chopper, take skewers and thread mince on it and make round gola shape kebabs. In a frying pan, heat oil, cook kebabs for 10 mins or until done, keep aside.

Heat oil, add onion, cumin seeds, green chilies, ginger garlic paste, cook until light golden, add yogurt, tomatoes, mint, coriander, salt, chili powder, allspice, cumin powder, coriander powder, cook for 5 mins, then add soaked rice, water, let it simmer on low heat till rice cooked, add in fried gola kebabs, mix slightly garnish with coriander leaves and serve with raita and kachoomber.




Milk 2 liters
Sugar ¾ cup
Corn flour 4 tbsp
Powder milk ½ cup
Dried whole milk 1 cup
Screw pine 1 tsp
Cardamom powder 1 tsp
Saffron ¼ tsp
Condensed milk 4 tbsp
Almonds and pistachio chopped ½ cup
Cream 200 gm


Cook milk in a pan for 20 mins, add sugar, cook mixture until reduce to half, gradually add corn flour mixed with little milk, cook until milxtire thick, add powder milk, khoya, kewra water, cardamom water, zafran, cook for another 5 mins till khoya dissolved, add condensed milk, cream, almonds and pistachio, mix it well, pour in an airtight container, freeze for 12 hours, cut in slices , drizzle with rose syrup and serve.
