GAJAR KA HALWA
Ingredients
Carrots finely grated 1 kg
Clarified butter ½ cup heaped
Sugar 1 cup
Whole dried milk 250 gm
Almonds sliced 2 tbsp
Pistachios sliced 2 tbsp
Silver leaves 2
Green cardamoms 8
Saffron ½ tsp
Milk ½ cup
METHOD
Heat clarified butter, add crushed cardamom, stir for a min, add grated carrots, cook for 10 mins uncovered, cover the pan, reduce the heat, simmer for another 10 mins, add in sugar, fry well till the sugar water dries, add crumbled whole dried milk, almonds, pistachio, cook well, remove in a platter, top with silver leaf and remaining almonds and pistachios.
