Yum & Easy Breakfast BURRITO in 20 min. Egg & Bacon. Recipe by Always Yummy!

Every chance that this simple recipe of egg and bacon burrito will take its place in the list of your favorites. It is tasty and mouth-watering. You can store up burritos, just cook and lay into a freezer up to one month - time when you always have favorite breakfast or evening snack at hand. And also wrap you burrito in foil and take with you to work place or give to your children to school. Burrito is always a good idea.

✅ Ingredients:
• 3 wheat tortillas
• 3 eggs
• milk – 3 tbsp
• bacon – 2 oz / 50 g
• red cheddar or any hard cheese – 40 g
• butter – 1 tbsp / 15 g
• sriracha sauce – 2 tsp
• sour cream 20% - 2 tbsp
• salt – ½ tsp

✅ Sauce:
• tomatoes – 5 oz / 130 g
• bulb onion – 1 oz / 25 g
• salt – ¼ tsp
• ground black pepper – ⅕ tsp
• chili pepper – to taste

✔︎ You will need:
• pan
• carving board
• 2 bowls

Preparation:
1. Grate the cheese, cut the bacon into small slices, chop the tomatoes, bulb onion and chili pepper.
2. Combine the chopped tomatoes, onion, chili pepper, ¼ tsp of salt and ⅕ tsp of ground black pepper in a bowl.
3. Heat a pan and add the bacon, fry over medium heat for 3-4 minutes until golden brown.
4. Beat 3 eggs, milk and ½ tsp of salt in a bowl.
5. Heat the pan and melt the butter, add the beaten eggs and fry over medium heat for 2-3 minutes stirring constantly, take the omelet out into a bowl.
6. Spread 1 tbsp of sour cream and 1 tsp of sriracha sauce in the centre of each tortilla, lay then the omelet, fried bacon, prepared vegetables and grated cheese, fold tortilla as an envelope.
7. Heat the pan over medium heat and lay out the burritos in the dry pan with the seams down, fry for 1-2 minutes on each side until golden crust.
8. It is better to serve the egg & bacon burritos hot.
❗️Advices:
1. You can wrap ready burritos in parchment paper and freeze up to 1 month. Unfreeze by placing into a fridge and fry in a pan with a bit of butter or vegetable oil.
